Danamethi Papad Ki Sabji is the most popular Rajasthani side dish.

Danamethi Papad Ki Sabji is very delicious and easy to make. You can prepare it with minimum ingredients like fenugreek seeds, papad, curd, and some spices. Moreover, it tastes good with hot chapati, and paratha. It is a healthy dish as it is made with fenugreek seeds. In addition, the most important thing about this dish is it does not require any vegetables. Whenever you don’t have vegetables in your kitchen here is the best option for your busy weekdays.   • Prepare this dish using Homemade Curd
  • Sour curd can be added to prepare this dish.
  • Stir the sabji after adding curd continuously till comes to one boil.
  • One teaspoon besan can be added to save curd to curdle.
  • Use room temperature curd to prepare this dish.
  • Add salt carefully as papad is also salty.
  • Wash fenugreek seeds using a sieve without touching them with your hands.
  • Moong papad can be added instead of urad papad.
  • Roasted papad can be used.
  • Add papad just before serving, else papad will turn soggy.

Ingredients

  • Clarified butter / Ghee - 2 Tablespoon
  • Cumin seeds / Jeera - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Curd / Dahi - 1 Cup whisked
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • Red chilli powder / Lal mirch powder - 1 Teaspoon
  • Coriander powder / Dhaniya powder - 1 Teaspoon
  • Cumin seeds powder / Jeera powder - 1 Teaspoon
  • Dry fenugreek leaves / Kasuri methi - 1 Teaspoon
  • Salt - As per taste
  • Green chilli / Hari mirch - 2
  • Fenugreek seeds / Danamethi - 1/2 Cup
  • Papad - 5
  • Coriander leaves / Hara dhaniya - A handful

Instructions

  1. Wash and boil fenugreek seeds till comes to one boil. Then keep the flame low. Then cook it for 8 to 10 minutes. Strain the water and keep it aside.
  2. Take curd in a bowl. Add turmeric powder, red chilli powder, coriander powder, cumin seeds powder, dry fenugreek leaves by rubbing between the palms. Mix well. Keep it aside.
  3. Heat ghee in a pan. Add cumin seeds, asafoetida, green chilli. Keep the flame low, then add curd and stir continuously on low flame till comes to one boil.
  4. Then boil it for more 2 to 3 minutes. Then add salt. Add salt carefully as papad is also salty. Now add boiled fenugreek seeds. Mix well.
  5. Take papad. Break papads into small pieces. Add it just before serving, else papad will turn soggy.
  6. Add coriander leaves. Mix well. Take out the sabji into the serving bowl.
  7. 'Danamethi Papad Ki Sabji' is ready to be served.
