Dhaba Style Baigan Bharta is a flavorsome curry with lots of Indian spices in it.

Dhaba Style Baigan Bharta is roasted eggplant/Baigan cooked with spices, onion, and tomato. It is generally served with chapati/phulka/jeera rice. Smokey roasted eggplant mash with spices is a very popular dish and one of my personal favorites too. There are different ways of making this bharta but this is the most common way and the one you will find in restaurants and dhaba. It is so spicy, tasty, and healthy, even those people don’t like eggplant, will surely love it. So try to prepare it and enjoy it. Let us know your feedback.

Ingredients

  • Brinjal/ baigan/ eggplant - 1 big (bharta vala)
  • Chopped tomato/ tamatar - 1 Cup
  • Chopped onion - 1 big sized
  • Ginger and green chili paste - 1 Tablespoon
  • Coriander leaves/ dhaniya patta - a handfull
  • Garlic/ lehsun - 5 to 6 cloves
  • Red chilli powder/ lal mirch - 1/2 Teaspoon
  • Turmeric powder -1/4 Teaspoon
  • Coriander/ dhaniya powder - 2 Tablespoon
  • Garam masala/all spice mix - 1/4 Teaspoon
  • Cumin powder - 1/2 teaspoon
  • Cumin seeds/ jeera - 1/2 Teaspoon
  • Asafoetida - a pinch
  • Oil/ tel - 2 Tablespoon
  • Salt - 1/2 teaspoon or as per taste

Instructions

  1. Make a long cut in the brinjal at one side with a knife. Check whether the brinjal is worm free or not. Make a coating of oil on the brinjal and roast it on a stove/ oven for 15 minutes. Put off the gas once the baigan turns soft.
  2. Peel the baigan and take the pulp out in a bowl. Mash it with a spoon.
  3. Heat oil in a pan and add asafoetida, cumin, chopped onions and chopped garlic to it. Saute for 7-8 minutes on a medium flame.
  4. Once the onions are brown, add all spices and mix well. Cook the spices for a while.
  5. Then add chopped tomatoes and ginger-green chilli paste and mix well.
  6. Add brinjal pulp, mix well and turn off the gas in a minute. Garnish with fresh coriander leaves.
  7. Flavorsome 'Dhaba Style Baigan Bharta' is ready to be served.
