Ingredients

  • Black chickpea / Kala chana - 1 Cup
  • Water - As required
  • Salt - As per taste
  • Onion / Pyaz - 1 Chopped
  • Green Chilli / Hari Mirch - 2 Chopped + 2 to 3 Slited
  • Tomato / Tamatar - 2 Chopped
  • Garlic / Lahsun - 7 to 8 Cloves
  • Oil - 2 tbsp
  • Cumin Seeds Powder / Jeera Powder - 1/2 tsp + As required
  • Asafoetida / Hing - 1/4 tsp
  • Salt - As per taste
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Coriander Powder / Dhaniya Powder - 1 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp + As required
  • Clarified Butter / Ghee - 1 tbsp
  • Chhole Masala - 1 tsp
  • Coriander Leaves / Hara Dhaniya - For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Soak chana for 3 to 5 hours. Transfer soaked chana to a pressure cooker. Add salt and cook it for 3 to 4 whistles till the chana becomes soft. Once done, strain chana.
  2. Take onion, green chilli, tomatoes, garlic, and 1/4 cup of boiled chana in a grinding jar. Grind it for a few seconds to prepare its puree.
  3. Heat oil in a pan. Add cumin seeds, asafoetida, and prepared puree. Mix well.
  4. Add salt, turmeric powder, coriander powder, and red chilli powder. Mix well.
  5. Saute it for 2 to 3 minutes on medium flame. Stir it occasionally.
  6. Add a little water and mix well. Saute it for 1 to 2 minutes till the oil separates on medium flame. Keep stirring occasionally.
  7. Now add chhole masala and mix well. Then add the boiled chana and mix well. Add a little water and mix well.
  8. Meanwhile, heat ghee in a tadka pan. Turn off the flame and add 1/2 tsp of cumin seeds and 1 tsp of red chilli powder. Mix well.
  9. Pour it into the chana pan. Garnish it with slited green chilli and coriander leaves.
  10. 'Dhaba Style Chana Masala | Chana Masala' is ready to be served.
