Dhaba style sabji are known for their flavor and unique texture. It goes well with crispy paratha, hot roti, or kulcha. Ingredients

  • Oil - 2 Tablespoons
  • Cumin seeds / Jeera - 1 Teaspoon
  • Green chilli / Hari mirch - 2 Finely chopped
  • Ginger / Adrakh - 2 Inch Grated
  • Onion / Pyaz - 1 Finely chopped
  • Salt - As per taste
  • Tomato / Tamatar - 1 Finely chopped
  • Red chili powder / Lal mirch powder - 2 Teaspoons
  • Turmeric powder / Haldi powder - 1 Teaspoon
  • Coriander powder / Dhaniya powder - 1 Teaspoon
  • Cumin seeds powder / Jeera powder - 1 Teaspoon
  • Dry fenugreek leaves / Kasuri methi - 2 Teaspoons
  • Milk - 1 Cup
  • Fresh cream / Homemade malai - 1/2 Cup
  • Cottage cheese / Paneer - 1 Cup crumbled
  • All spice mix powder / Garam masala - 1/2 Teaspoon

Instructions

  1. Heat oil in a pan. Add cumin seeds, green chilli, ginger, and onion. Mix well. Saute it for 1 minute.
  2. Now add salt and mix well. Then add tomato. Mix well and saute it for 1 to 2 minutes on high to medium flame.
  3. Add red chilli powder, turmeric powder, coriander powder, and cumin seeds powder. Mix well.
  4. Cook it for 2 to 3 minutes on medium flame. Then add 1 Teaspoon of dry fenugreek leaves by rubbing between your palms. Mix well.
  5. Then keep the flame low and add milk. Mix well and add fresh cream. Mix well and add a little salt. Cook it for 2 to 3 minutes on medium flame.
  6. Now add paneer. Mix well. Add all spice mix powder and 1 Teaspoon of dry fenugreek leaves by rubbing between your palms. Mix well.
  7. Once done, garnish it with coriander leaves. Mix well and turn off the flame. Take it out to a serving bowl.
  8. 'Dhaba Style Paneer Bhurji' is ready to be served.
