Dhaba Style Paneer Masala With Tandoori Roti is a quick, flavorful, and spicy dish. Paneer masala sabji is prepared with marinated paneer and special ground masala. It tastes amazing with tandoori roti.   • The dough should be rested for at least 60 minutes.

Ingredients

  • FOR MARINATION :
  • Cottage cheese / Paneer - 1 Cup diced
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirchi powder - 1 tsp
  • All spice mix powder / garam masala - 1/4 tsp
  • Water - As required
  • Oil - 3 Cups
  • FOR PREPARING DRY MASALA :
  • Cumin seeds / Jeera - 1 tbsp
  • Coriander seeds / Sabut dhaniya - 2 tbsp
  • Black peppercorns / Kali mirch - 1/2 tbsp
  • Cloves / Laung - 4 to 5
  • Black cardamom / Badi elaichi - 2
  • Cardamom / Elaichi - 1
  • Cinnamon / Dal chini - 1 Stick
  • FOR PREPARING DHABA STYLE PANEER MASALA :
  • Dry red chilli / Sukhi lal mirch - 2
  • Cloves / Laung - 2 to 3
  • Black peppercorns / Kali mirch - 3 to 4
  • Cumin seeds / Jeera - 1 tsp
  • Onion / Pyaz - 1 Finely chopped
  • Tomato / Tamatar - 3 Grated
  • Ginger / Adarkh - 2 Inch chopped
  • Garlic / Lahsun - 3 to 4 Cloves crushed
  • Green chilli / Hari mirchi - 2 Chopped
  • Red chilli powder / Lal mirchi powder - 1 tsp
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Coriander powder / Dhaniya powder - 1 tsp
  • Cumin seeds powder / Jeera powder - 1 tsp
  • Salt - As per taste
  • All spice mix powder / garam masala - 1/2 tsp
  • Roasted gram flour / Besan - 1 tbsp
  • Water - As required
  • Coriander leaves / Hara dhaniya - A handful
  • FOR PREPARING TANDOORI ROTI :
  • Whole wheat flour / Gehu ka aata - 1 Cup
  • Curd / Dahi - 2 tbsp
  • Salt - As per taste
  • Oil - 2 tsp
  • Water - As required
  • Butter - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING DHABA STYLE PANEER MASALA :
  2. Take cumin seeds in a pan. Add coriander seeds, black peppercorns, cloves, black cardamom, cardamom, and cinnamon stick. Roast it for 1 to 2 minutes on low flame till the nice aroma begin to rise. Stir it occasionally. Then turn off the flame. Let it cool down. Now transfer it to a grinding jar. Grind it for a few seconds. Keep it aside.
  3. Take paneer in a bowl. Add salt, turmeric powder, red chilli powder, and all spice mix powder. Mix well. Add some drops of water and mix well. Keep it aside for 10 to 15 minutes.
  4. Heat oil in a pan for frying. Add marinated paneer. Deep fry them on high flame for 1 to 2 minutes until they become light golden brown from both sides. Then take them out to a plate using a slotted spoon. Keep it aside.
  5. Now in the same pan, add dry red chilli, cloves, black peppercorns, cumin seeds, and onion. Mix well. Saute it for 2 to 3 minutes on low flame till it becomes brown. Stir it occasionally.
  6. Then add grated tomato. Mix well. Add ginger, garlic, and green chilli. Mix well. Saute it on high flame for 2 to 3 minutes.
  7. Further, add red chilli powder, turmeric powder, coriander powder, cumin seeds powder, all spice mix powder, and salt. Mix well.
  8. Now add roasted gram flour and mix well. Add little water and 1 & 1/2 tsp ground spices mixture. Mix well.
  9. Cook it for 4 to 5 minutes on medium flame. Stir it occasionally.
  10. Now add fried paneer. Mix well. Take it out to the serving bowl and garnish it with coriander leaves.
  11. FOR PREPARING TANDOORI ROTI :
  12. Take whole wheat flour in a bowl. Add curd, salt, and oil. Mix well. Add water gradually to make the medium soft dough. Keep it aside and let it rest for 60 minutes.
  13. Take small ball sized dough and make round shaped circular peda from the dough. Dust it with flour. Roll a peda to make a roti. Apply water on one side of the prepared roti.
  14. Meanwhile, heat a tawa. place the water-coated surface on a heated tawa. Let it cook for 1 to 2 minutes on medium flame.
  15. Then flip the tawa upside down and cook the roti directly on the flame until it turns golden brown. Then remove it from the tawa.
  16. Take it out to a serving plate and apply butter to it.
  17. 'Dhaba Style Paneer Masala With Tandoori Roti' is ready to be served with lemon and onion salad.
