Ingredients

  • Clarified butter/Ghee - 2 tablespoon
  • Oil - 2 tablespoon
  • Cumin seeds/Jeera - 1 teaspoon
  • Green chili/Hari mirch - 1 no finely chopped
  • Ginger/Adrak - 1 inch grated
  • Garlic cloves/Lehsun - 5 to 6 no finely chopped
  • Onion/Pyaz - 1 no finely chopped
  • Cottage Cheese/Paneer cubes - 1 cup
  • Tomato/Tamatar - 1 no finely chopped
  • Turmeric powder/Haldi powder - 1/2 teaspoon
  • Salt - to taste
  • Kashmiri red chili powder - 1 to 1&1/2 teaspoon
  • Coriander seeds/Dhania powder - 1 teaspoon
  • Tomato puree - of 1 tomato
  • Water - as required
  • Cashew nuts/Kaju - 10 to 12
  • Kasuri Methi/Dry fenugreek leaves - 1 teaspoon
  • All spice mix powder/Garam masala - 1 teaspoon
  • Coriander leaves - to garnish

Instructions

  1. Soak the cashewnuts in the hot water for 15 minutes or in cold water for 2 hours and make its paste. Heat ghee in a pan, add 1 tablespoon of oil. Put the cumin seeds, finely chopped green chili, grated ginger and finely chopped garlic. Then add the chopped onion.
  2. Saute the onion on high flame till it is brown in color. In other pan, heat 1 tablespoon of oil and shallow fry the paneer cubes. Keep stirring and saute the paneer cubes.
  3. Now, put the turmeric powder, salt to taste, kashmiri red chili powder, and coriander seeds powder. Mix well. Then add the tomato puree to the gravy pan.
  4. Let it cook for 1 to 2 minutes till the ghee oozes out from the gravy. Then add the sauted paneer cubes. Mix well and add water to the gravy.
  5. Now, put the cashew nuts paste, rub dry fengreek leaves and add. Put the all spice mix powder and mix well. Garnish with the coriander leaves.
  6. The Dhaba Style Paneer Sabji is ready to be served with hot roti/phulka.
