Drumstick Curry | Gujarati Saragvanu Lot Vadu Saak is spicy and tangy sabji.

Drumstick Curry | Gujarati Saragvanu Lot Vadu Saak is a healthy side dish for dinner or lunch. You can prepare it with drumstick, fenugreek leaves, curd, and some spices. Drumsticks are rich in phosphorous, vitamins, and other minerals. It purifies the blood and is great for boosting immunity. Tips and suggestions by the Mom Chef:

  • Use drumsticks that are medium in size with fewer seeds and more pulp.
  • The curd shouldn’t be sour.
  • It is recommended to use the heavy bottom pan or nonstick pan to prepare this sabji.
  • When the besan mixture becomes fluffy and thick, it indicates that the sabji is well cooked.

Ingredients

  • FOR BOILING DRUMSTICK :
  • Drumstick / मुनगा / सहजन - 2
  • Water / पानी - 2 Cups
  • Salt / नमक - As per taste
  • FOR PREPARING DRUMSTICK CURRY :
  • Oil / तेल - 1 Tbsp
  • Mustard seeds / राई - 1/2 Tsp
  • Cumin seeds / जीरा - 1/2 Tsp
  • Asafoetida / हिंग - A pinch
  • Dry red chilli / सुखी लाल मिर्च - 1
  • Curry leaves / कढ़ी पत्ता - A few
  • Sesame seeds / तिल - 1 Tsp
  • Fenugreek leaves / हरी मेथी - 2 Cups finely chopped
  • Gram flour/ बेसन - 1 Cup
  • Curd / दही - 1 & 1/2 Cups
  • Garlic paste / लहसुन पेस्ट - 1/2 Tsp (optional)
  • Ginger paste / अदरक पेस्ट - 1/2 Tsp
  • Green chilli paste / हरी मिर्ची पेस्ट - 1/2 Tsp
  • Turmeric powder / हल्दी पाउडर - 1/2 Tsp
  • Coriander powder / धनिया पाउडर - 1 Tsp
  • Cumin seeds powder / जीरा पाउडर - 1 Tsp
  • Salt / नमक - As per taste
  • Water / पानी - 2 Cups
  • Jaggery / गुड़ - 1 Tsp
  • Coriander leaves / हरा धनिया - A handful
  • Tsp = Teaspoon
  • Tbsp = Tablespoon

Instructions

  1. FOR BOILING DRUMSTICK :
  2. Firstly, remove the dead skin of the drumstick from the top and the tip at the other end. Cut it into long pieces. Now make a vertical slit from top to the bottom of each piece of the drumstick.
  3. Now in a pressure cooker, add water, salt, and drum stick pieces. Cook it till 1 whistle on a high flame. Then drain out its water. Keep the boiled drumstick aside.
  4. FOR PREPARING DRUMSTICK CURRY :
  5. Take gram flour in a bowl. Add curd and mix well to make lumps-free mixture.
  6. Now add garlic paste, ginger paste, green chilli paste, turmeric powder, coriander powder, cumin seeds powder, and salt. Add water and mix well. Keep it aside.
  7. Further, heat oil in a heavy bottom pan. Add mustard seeds, cumin seeds, asafoetida, dry red chilli, curry leaves, sesame seeds, and fenugreek leaves. Mix well and saute it for 2 to 3 minutes on low flame.
  8. Now add the prepared curd mixture. Stir it continuously on low flame for 1 to 2 minutes till it starts to boil. Add little water and boiled drumstick. Mix well.
  9. Cover the pan with a lid and cook it for 2 minutes on low flame. When the besan mixture becomes fluffy and thick, it indicates that the sabzi is well cooked.
  10. Once done, add jaggery and coriander leaves. Mix well and take it out to a serving bowl.
  11. 'Drumstick Curry | Gujarati Saragvanu Lot Vadu Saak' is ready to be served.
