Eggless Christmas Cake | Fruit Cake Without Alcohol is a classic fruit cake. It is made with soaked dry fruits and some easily available ingredients. Tips and suggestions by a mom chef :

  • Oil should be colorless and odorless.
  • Use room temperature curd.
  • Jaggery can be used instead of brown sugar.
  • Pour the juice until dry fruits are completely submerged in it.
  • Keep soaked dry fruits outside at room temperature.
  • Do not add sugar, if you are using canned juice.
  • If the batter is too thick then add 1 & 1/2 tablespoon of milk.
  • Any type of cake tin can be used to bake the cake.
  • Grease the loaf tin and butter paper with oil to unmould the cake easily.
  • Don’t open OTG while the cake is baking otherwise, the cake will sink.
  • Cover the cake with a cling wrap or wet cloth to prevent it to become dry.

Ingredients

  • DRY INGREDIENTS :
  • All purpose flour / Maida - 1 & 1/2 Cup
  • Cocoa powder - 1 Tablespoon
  • Cinnamon powder / Dalchini powder - 1/2 Teaspoon
  • Dry ginger powder/ Sonth powder - 1/4 Teaspoon
  • Baking soda - 1/4 Teaspoon
  • Baking powder - 1 Teaspoon
  • Dry fruits (almond, cashew, and walnuts) - 1/4 cup, finely chopped for the batter and as required for garnishing
  • FOR SOAKING DRY FRUITS :
  • Apricots, dates, tutti frutti, and raisins (black and brown) - 1 Cup finely chopped
  • Fresh orange juice - As required to soak the dry fruits.
  • FOR PREPARING FRUIT CAKE :
  • Oil - 1/2 Cup for the batter and as required for greasing
  • Fresh curd - 1/2 Cup
  • Vanilla essence - 1 Tablespoon
  • Powdered brown sugar - 1 Cup
  • Milk - 1 & 1/2 Teaspoon or as required

Instructions

  1. FOR SOAKING DRY FRUITS :
  2. Take apricots, dates, tutti frutti, and raisins in a glass jar. Pour orange juice until dry fruits submerged. Soak them for 1 to 2 hours. 
  3. After 2 hours strain them. Keep them aside.
  4. FOR MIXING DRY INGREDIENTS :
  5. Take a bowl. Put a sieve on it. Take all purpose flour, cocoa powder, cinnamon powder, dry ginger powder, baking soda, baking powder. Sieve them. Now add dry fruits and keep them aside.
  6. Meanwhile, preheat the OTG at 180 degrees celsius for 10 minutes.
  7. FOR PREPARING FRUIT CAKE :
  8. Take oil in a large bowl. Add curd, vanilla essence, and powdered brown sugar. Mix well.
  9. Now add soaked dry fruits. Then add dry ingredients gradually. Mix well with a spatula using the cut and fold method (Cut the batter from centre then fold from the sides to mix). Keep the consistency of the batter thick.
  10. If the batter is too thick then add 1 & 1/2 tablespoon of milk. Mix well.
  11. Take a loaf tin and grease it with the oil. Place the butter paper on all sides and grease it with the oil.
  12. Pour the batter and level it. Tap it. Now, garnish it with dry fruits and tutti frutti.
  13. Now place the loaf tin in OTG and set the temperature at 160 degrees Celsius for 55 minutes.
  14. After 55 minutes, take out the cake tin and check the cake by placing the toothpick in the center of the cake. If the cake does not stick to the toothpick, that means the cake is baked properly.
  15. Now, allow it to cool down for 1/2 to 1 hour. Demould the cake and remove the butter paper. Let it cool down for 2 to 3 hours.
  16. Then cover the cake with a cling wrap or wet cloth to prevent it to become dry. Keep it aside for 3 to 4 hours.
  17. After that, you can cut it into equal pieces.
