Ingredients

Maida/ All purpose flour - 2 cups + for coating the cake pan
Milk powder - 1 cup
Malai/ Homemade cream - 1 cup
Milk - 1 Cup
Powdered Cheeni/ Sugar - 1 cup
Vanilla Essence - 1 teaspoon
Baking soda - 1/2 tsp
Baking powder - 1/2 teaspoon
Butter - 1 cup melted
Tutti frutti - 2 tablespoons or as required
Ghee/ Clarified butter - for greasing

Instructions

Melt the butter on low flame and add powdered sugar to it . Mix well and turn off the flame once the mix is ready.
Take a bowl and add maida, milk powder, baking powder, baking soda sieving them through a siever. Mix well.
Now add all wet ingredients like malai, milk, sugar, and butter. Mix well and vanillla essence and mix them well .
Mix the cake mixture in one direction with hand or whisker to avoid the lumps until it reaches a good consistency. Whisk it for 4-5 minutes.
Mix the tutti fruitti to the cake mix . Keep the mix aside.
Take the cake pan and grease it with ghee. Sprinkle some maida over it .
Pre-heat the microwave in conventional mode at 180 degrees for 10 minutes.
Pour the cake mix into the cake pan and tap it properly to settle the mixture properly.
Place the cake pan in the microwave and bake it for around 45 to 50 minutes.
Check the cake by inserting a toothpick. It should come out clean. If the cake is not yet done then back it for more 5 to 10 minutes in 160 degree temperature in the microwave.
Once the cake is baked, allow it to cool down .
Eggless Vanilla Tutti Frutti Cake is ready to be served.
