Tips and Suggestions by a Mom Chef:

  • To remove the smell of mustard oil : Take salt on your palm and add a drop of water to it. Add it to the hot oil.
  • The ratio of carrot, white radish, and cauliflower should be 1:1.
  • Add sugar to enhance the taste of pickle.
  • You can add mustard oil as per your choice.
  • You can consume this pickle for 15 days.

Ingredients

  • Mustard Oil / Sarso Ka Tel - 2 to 3 tbsp
  • Cauliflower / Gobi - 1 Cup florets
  • White Radish / Mooli - 1
  • Carrot / Gajar - 1
  • Green Chilli / Hari Mirch - 2 to 3
  • Ginger / Adrakh - 2 Inch
  • Fennel Seeds / Saunf - 2 tsp ground
  • Mustard Seeds / Rai - 1 tsp ground
  • All Spice Mix Powder / Garam Masala - 1 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Salt - As per taste
  • Asafoetida / Hing - 1/2 tsp
  • Sugar / Chini - 1/2 tsp
  • Dry Fenugreek Seeds / Dana Methi - 1/2 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Peel carrot, white radish, and ginger well. Then chop them in long pieces. Cut green chillies also in long pieces.
  2. Then spread white radish, carrot, cauliflower, ginger, and green chilli on the kitchen towel and keep it in the sunlight for 60 minutes.
  3. Heat mustard oil in a pan. Take salt on your palm and add a drop of water to it. Add it to the hot oil.
  4. Then turn off the flame. Add all the prepared vegetables. Mix well.
  5. Add fennel seeds, mustard seeds, all spice mix powder, red chilli powder, salt, asafoetida, sugar, and dry fenugreek seeds. Mix well.
  6. Take it out in a air tight glass jar and keep it in the sunlight for 1 day.
  7. The pickle will be ready to consume after 1 day. You can consume this pickle for 15 days.
  8. 'Gobhi Gajar Mooli Ka Achar' is ready to be served with paratha, roti, or mathri.
