Ingredients

  • Cauliflower / Phulgobhi - 1 Cup
  • Green chilli / Hari mirchi - 3 to 4 Finely chopped
  • Coriander leaves / Hara dhaniya - A handful
  • Ginger / Adrakh - 2 Inch Grated
  • Fennel seeds / Saunf - 1 tsp crushed
  • Carom seeds / Ajwain - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • Black pepper powder / Kali mirch powder - 1/2 tsp (optional)
  • Dry mango powder / Aamchur - 1/2 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • Gram flour / Besan - 3 to 4 tbsp
  • Rice flour / Chawal ka aata - 2 tbsp
  • Water - As required
  • Baking soda - A pinch
  • Oil - For frying
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Boil cauliflower in water for 2 to 3 minutes. Then chop it.
  2. Take cauliflower in a bowl. Add green chilli, coriander leaves, ginger, fennel seeds, carom seeds by rubbing between palms, asafoetida, salt, turmeric powder, red chilli powder, black pepper powder, dry mango powder, and all spice mix powder. Mix well.
  3. Now add gram flour and rice flour. Mix well. Now add water gradually to prepare a thick consistency batter. Add baking soda and mix well.
  4. Meanwhile, heat oil in a deep frying pan over medium flame. When the oil is medium hot, take 1/2 tsp batter to the spoon. Place it gently into the hot oil.
  5. When the top surface turns light golden brown, flip them using a slotted spoon.
  6. Deep fry them on medium flame until crispy and light golden brown from both sides, and take them out to a serving plate using a slotted spoon.
  7. 'Gobhi Ke Pakode | Gobi Pakora' is ready to be served.
