Tips and Suggestions by Mom Chef:-

  • Grind the raw peanuts to make it’s powder (without roasting the peanuts).
  • Add oil and lemon juice according to the requirement till the masala mixture binds together.
  • You can use regular pan, instead of grill pan.
  • Apply a thin layer of masala on the cut brinjal pieces.

Ingredients

  • Bharta Baingan/Eggplant - 1 no (big size)
  • Lemon juice - juice of one lemon
  • Salt - to taste
  • Haldi powder/Turmeric powder - 1/2 pinch for sprinkling on each eggplant piece
  • FOR MASALA
  • Besan/Gram flour - 2 tablespoon
  • Rice flour - 2 tablespoon
  • Mungfali/Peanut powder - 2 tablespoon
  • Coriander leaves - as required chopped
  • Adrak-Hari Mirch/Ginger- Green chili paste - 1/2 teaspoon
  • Haldi powder/Turmeric powder - 1/2 to 1 teaspoon
  • Lal Mirch Powder/Red Chili Powder - 1 teaspoon
  • Cumin seeds/Jeera Powder - 1/2 to 1 teaspoon
  • Dhania powder/Coriander seeds powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoon
  • Lemon juice - 2 tablespoon
  • Oil - for greasing
  • Chaat masala - to garnish
  • Coriander leaves - to garnish

Instructions

  1. Cut the eggplant in circular piece and place them on a tray. Apply lemon juice on one side and then flip and apply on the other side also. Sprinkle turmeric powder and salt on it and spread over it.
  2. For making the masala, in a bowl, take gram flour, rice flour, peanut powder, coriander leaves. Then put ginger-green chili paste, turmeric powder, red chili powder and cumin seeds powder.
  3. Then put the coriander seeds powder, salt to taste, oil and lemon juice one tablespoon each. Mix and again add one tablespoon each of oil first and then lemon juice so that the masala mixture binds together.
  4. Meanwhile heat the pan. Make 3 to 4 small cuts on each eggplant piece on both the sides with a knife. Then apply the masala mixture on one side with the hands. Flip and apply a thin layer of masala mixture on the other side also.
  5. Grease the grill pan with 1 tablespoon of oil. Place the brinjal cuts in the pan on high flame. After 2 minutes turn the flame from high to medium. Grill for 3 to 4 minutes.
  6. After 3 to 4 minutes flip, before flipping put about 1 teaspoon of oil and then place the piece back. Grill from the other side for 3 to 4 minutes on medium flame.
  7. Take it out on a plate, garnish by sprinkling chaat masala and coriander leaves.
  8. The Grilled Baingan | Grilled Brinjal is ready to serve.
