How to Soak Sabudana for Perfect Sabudana Khichdi or Vada is an important process to have non-sticky sabudana. It is also known as sago and tapioca pearl pilaf. If you soak Sabudana/ tapioca in more water than required then it will turn mushy and sticky. The perfect amount of water is the reason for the perfect nonsticky sabudana. It is a good snack and breakfast option too. Sago is a very healthy and rich source of carbohydrates hence good for growing kids. Try to prepare it at home and enjoy it with family and friends.   • To test the sabudana, pick up a soaked pearl, and mash it between your finger and thumb. It should squish easily.
  • Do the smash test and if not ready, sprinkle some water and give a quick stir and let it sit for 2 more hours.
  • Draining the excess water is the necessary step.
  • Wash sabudana in running water, so that starch is rinsed and washed away.

Ingredients

  • Sabudana/ tapioca pearls - 1 bowl
  • Water - as required

Instructions

  1. Take a bowl of sabudana. Wash it under tap water for 4 to 5 times until clear water appears. This takes off most of the starch and prevents sticking.
  2. Further, soak sabudana for 30 to 40 minutes by adding just enough water to cover it. Just 1/4 inch more than sabudana level.
  3. Now, strain the water from the sabudana.
  4. Cover and soak it again for 5 to 6 hours or preferably overnight. Sabudana will fluff up after soaking.
