Tips and suggestions by the Mom Chef:
- If fine semolina is not available, then coarse grind the semolina to make it fine.
- The ratio of curd, sooji, and poha should be 1:1:1.
- Don’t add mustard oil or coconut oil to the dhokla batter.
- Water can be added to the batter to adjust the consistency.
- Add fruit salt just before steaming the dhokla.
- The dhokla should be put in the steamer for steaming only after the water boils.
