Kaddu ka Raita is a unique recipe and a little different from other raita recipes.

Kaddu ka Raita or Pumpkin Raita is easy to prepare using fresh pumpkin and yogurt. Raita beautifully combines the slight sweetness of the pumpkins or kaddu with cumin and the creaminess of the yogurt. It goes very well with Indian meals. Raita holds a special place in Indian cuisine. Pumpkins are as such loaded with Vitamin A and dietary fibers and are also a good source of minerals, amino acids. It’s a delicious and light mix to have with any dish in place of spicy curry and this is one recipe that can be made really quickly. Moreover, the flavor of Pumpkin blends so well with yogurt that nobody realizes that they are eating Kaddu Ka Raita. So, try it and share your feedback in the comment section.

  • If you feel the consistency of the curd is too thick, you can add a little water to adjust that.
  • Salt or black salt is added at the serving time.
  • If you are making this for the kids, you can make a smooth paste/puree of the boiled pumpkin instead of roughly mashing it.

Ingredients

  • Kaddu/ pumpkin pieces - 1 small bowl
  • Curd - 1 bowl, whisked
  • Roasted cumin powder - 1 teaspoon(as required)
  • Black pepper powder - 1/4 teaspoon(as required)
  • Dry mint powder - 1 teaspoon
  • Black salt - a pinch
  • Salt - as per taste

Instructions

  1. Take pumpkin, peel it and cut into small pieces.
  2. Boil it in a pressure cooker till 1 whistle.
  3. Drain water and take pumpkin in a bowl. Mash it.
  4. Take a bowl of whisked curd, and add mashed pumpkin to it. Stir it well.
  5. Add roasted cumin powder, black pepper powder, and dry mint powder. Mix it well.
  6. Add salt and black salt during serving time.
  7. Delicious Kaddu Ka Raita is ready to be served.
