Kairi Ki Khatti Meethi Launji | Aam Ki Launji is a mouthwatering preparation of raw mango. This seasonal delicacy has achari flavours with tangy, sweet and little spicy taste. Various type of seeds – mustard seeds, cumin seeds, fennel seeds, fenugreek seeds, kalonji/onion seeds are used which gives an achari flavour to the dish. This goes well with paratha, roti, poori or even with khakra. Moreover, it is very quick and easy to prepare. It is like a chutney for your meals. So, try this lip-smacking dish at your end and enjoy the summer with your loved ones.

  • Mustard oil gives a nice flavour to the dish. So, use mustard oil if possible.
  • You can adjust the sweetness as per your taste.

Ingredients

  • Raw Mango/Kacchi Kairi - 1 big sized
  • Heeng/Asafoetida - a pinch
  • Mustard seeds - 1/2 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Saunf/Fennel Seeds - 1/2 Teaspoon
  • Kalonji/Onion Seeds - 1/2 Teaspoon
  • Danamethi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Turmeric powder - 1/2 Teaspoon
  • Coriander powder - 1 Teaspoon
  • Salt - as per taste
  • Black salt - as per taste
  • Red Chilli powder - 1/2 Teaspoon or as per taste
  • Jaggery Powder - 1/2 Cup or as per taste
  • Sarson Ka Tel/Mustard oil - 1 Tablespoon
  • Water - 1/2 Cup

Instructions

  1. Wash, peel the raw mango. Then cut into pieces.
  2. Heat mustard oil in a kadai.
  3. Add asafoetida, mustard seeds. Let it splutter. Then add cumin seeds, fennel seeds, kalonji, fenugreek seeds. Saute it for few seconds.
  4. Now, add mango pieces. Saute it. Add turmeric powder and mix well. Cook it on a low flame for 2 minutes.
  5. Then add 1/2 cup of water to it. Cover and cook on low flame 3 to 4 minutes or until mango turns softer.
  6. Add coriander powder, salt, black salt, red chilli powder. Mix well then add jaggery powder and little water. Mix well and cook for 1 to 2 minutes. Then switch off the gas.
  7. Delicious '' is ready to be served.
