Khaman Dhokla is a very famous breakfast of Gujarat. 

Khaman Dhokla is soft and spongy breakfast and snack. This delicious, little sweet in taste is a regular and most lovable breakfast in Gujarat. You can make fluffy dhokla very easily at home by following simple tips and tricks. Apart from this, it is very healthy as it uses gram flour. It is very quick and simple to make with easily available ingredients. This can be a good evening snack too. So, try to make it home and let us know your feedback.

This recipe was prepared by Bharti Mehta ji – A lovely grandmom from Gujarat with 65 plus years of cooking experience.

Tips and Suggestions by Mom Chef:-

  • Beat the batter with hands. This will make the dhokla more fluffy.
  • Add water little by little to make perfect consistency batter. The batter should be thick flowing consistency.
  • Preheating of the steamer is an important step.
  • Spread oil on the dhokla. This will prevent the dhokla from drying.
  • By adding sugar syrup, the dhokla will be moist and taste will also enhance.

Ingredients

  • Besan/Gram Flour - 1 Cup
  • Water - 1 Cup
  • Baking Soda - a pinch
  • Powdered Sugar - 1 Teaspoon
  • Salt - as per taste
  • Lemon Juice - juice of 1 lemon
  • Hing/Asafoetida - a pinch
  • Eno(Fruit Salt) - 1 Packet
  • INGREDIENTS FOR TADKA:-
  • Oil - 2 Tablespoon
  • Mustard seeds - 1 Teaspoon
  • Sesame Seeds - 1 Teaspoon
  • Green Chilli - 3
  • Curry Leaves - few
  • Hing/Asafoetida - a pinch
  • OTHER INGREDIENTS:-
  • Powdered Sugar - 2 Teaspoon
  • Water - 1/2 Cup
  • Coriander leaves - as required for garnishing
  • Fresh Grated Coconut - as required for garnishing

Instructions

  1. Heat water in a pan or kadai or steamer. Place a stand. Great a deep plate with oil. Keep it in a steamer. Pre-heat it for 5 Minutes.
  2. Take a bowl and add baking soda, powdered sugar, salt, asafoetida, lemon juice. Mix well then add gram flour.
  3. Add water little by little to it and make thick batter. Beat it with hands for 2 minutes.
  4. Keep 2 Tablespoon water aside. Add eno/fruit salt to the water. Mix well. Add the eno water to the batter and mix well. Beat it with hands for few seconds.
  5. Pour this batter on a greased plate. Steam the dhokla for 10 minutes. Then lower the flame and take out the plate. Spread oil on the dhokla.
  6. Let it cool for a while then cut into pieces.
  7. PREPARING THE TADKA:- Take a tadka pan, add oil and heat it.
  8. Add mustard seeds and let it splutter.
  9. Then add split green chilli, curry leaves, sesame seeds, asafoerida. Switch off the gas.
  10. Melt powdered sugar in a bowl. Pour this syrup over the cooked dhokla. Add little syrup to the tadka.
  11. Pour the tadka over dhokla.
  12. Garnish it with chopped coriander leaves, fresh grated coconut.
  13. Delicious 'Khaman Dhokla' is ready to be served.
