Tips and Suggestions by the Mom Chef :
- You can add lemon juice or curd instead of citric acid.
- The ratio of water to gram flour should be 1:1.
- Mix the batter well with a beater/whiskers for 4 to 5 minutes to make soft and spongy khaman.
- The khaman should be put in the steamer for steaming only after the water boils.
- If desired, 1 Tablespoon fine sooji can be added with gram flour.
- Insert a toothpick/knife to check khaman. If it comes out clean then it is cooked perfectly.
- Add fruit salt just before steaming the khaman.
