Khariya | Khichu is a special winter dish.

Khariya | Khichu is a famous Rajasthani snack. It is a quick and simple to make with easily available ingredients. You can make this dish with wheat flour and some spices. You can enjoy it with dal or sugar also. Moreover, You can prepare by steaming only, so it is also good for health as it does not involve any frying process. Tips and Suggestions by a Mom Chef:

  • The ratio of water to whole wheat flour should be 3:2.
  • You can add water to adjust the consistency.
  • You can add baking soda instead of papad khar.
  • The khariya should be put in the steamer for steaming only after the water boils.

Ingredients

  • Water - 1 & 1/2 Cups + As required
  • Whole Wheat Flour / Gehu Ka Aata - 1 Cup
  • Salt - As per taste
  • Asafoetida / Hing - A pinch
  • Cumin Seeds / Jeera - 1 tsp + For garnishing
  • Papad Khar - 1/2 tsp
  • Ginger-Green Chilli Paste / Adarak-Hari Mirchi Paste - 1 tsp
  • Oil - 1 tbsp + For greasing
  • Clarified Butter / Ghee - As required
  • Red Chilli Powder / Lal Mirch Powder - For garnishing
  • Coriander powder / Dhaniya powder - For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Boil water in a pan. Then turn off the flame and add whole wheat flour. Mix well.
  2. Now add salt, asafoetida cumin seeds, and papad khar. Mix well.
  3. Then add ginger-green chilli paste and oil. Mash it using a glass or bowl to make lumps free mixture.
  4. Grease your palms with the oil. Take a small ball sized dough and make a peda of the dough. Then make a small hole in the center of it using a rolling pin. Likewise, prepare all khariya from the mixture.
  5. Grease the idli mold with oil. Arrange all the prepared khariya on the steam tray.
  6. Heat water in a steamer. The khariya should be put in the steamer for steaming only after the water boils.
  7. Place the mold in the steamer. Cook it on a medium flame for 10 to 12 minutes.
  8. Check the khariya by inserting a toothpick/knife. If it comes out clean then the khariya is ready. Once done, turn off the flame and take out the steam tray.
  9. Then de-mold it and take out all the khariya on a serving plate. Cut them into 4 pieces. Pour ghee on it and garnish it with red chilli powder, cumin seeds, and coriander leaves.
  10. 'Khariya | Khichu' is ready to be served.
