Khoba Roti | Rajasthani Khoba Roti

One of the famous dishes from Rajasthani Cuisine is Khoba Roti | Rajasthani Khoba Roti. It is thick, crusty roti served with lots of ghee, Panchmel Dal and Aloo Pyaaz Ki Sabzi. ‘Khoba’ means small cavities that is how the roti is prepared on earthen tawa/Mitti ka tawa. This is also known as Jadi Roti or Chuti Roti. The whole wheat flour is mixed with little gram flour, carom seeds, homemade cream that is malai, milk to make the tight dough. Then rolled and cooked on a low flame to make this unique roti. It is very easy and simple to make roti. So, try to make this roti at home and relish with your family.

Tips and Suggestions by the Chefs:-

  • Adding ghee in the dough and for serving is important. So, do not avoid it.
  • Knead a tight dough and while rolling the roti seal the edges of the roti.
  • Cook the roti on a low flame only to get the perfect texture and well-cooked roti.

Ingredients

  • Whole Wheat Flour - 1 & 1/2 Cup
  • Besan/Gram Flour - 1 Tablespoon
  • Malai/Homemade Cream - 1 Tabespoon
  • Ajwain/Carom Seeds - 1/2 Teaspoon
  • Salt - as per taste
  • Ghee/Clarified Butter - 1 & 1/2 Tablespoon + as required for serving
  • Warm Milk - 1 Tablespoon
  • Warm Water - as required to knead the dough

Instructions

  1. Take a big thali and add whole wheat flour, gram flour, salt, carom seeds, malai/homemade cream, warm milk. Mix all the ingredients well.
  2. Then add melted ghee and mix well. It should bind together that is the indication of perfect moyan.
  3. Now, add little warm water to make tight dough.
  4. Knead the dough for 1 to 2 minutes. Roll to make smooth ball.
  5. Roll the dough to make thick roti. Thickness should be 1/2 cms.
  6. Meanwhile, heat a earthen tawa/mitti ka tawa or regular tawa.
  7. Once the tawa is hot, place the roti and cook it on low flame. It will take 10 minutes to cook the roti from one side. On the top side make small peaks from edges to center.
  8. After 10 minutes, flip the roti and cook it from another side.
  9. When it turns nice golden brown from both the sides, take it out on a plate. Pour ghee on the top of peak side.
  10. Delicious 'Khoba Roti | Rajasthani Khoba Roti' is ready to be served with Aloo Pyaaz Ki Sabzi.
