Lauki Kofta Sabzi

Lauki Kofta Sabzi is a lip-smacking curry for everyone. 

Lauki Kofta Sabzi is very delicious curry. The kofta made of lauki/bottle gourd served with tomato-based gravy. This is no onion and no garlic recipe so everyone can enjoy this sabzi especially Jain. This is a good way to include this super healthy veggie because most of the people don’t want to eat this veggie. Moreover, it is very simple and easy to prepare. This sabzi goes well with paratha, roti even with rice. So, try to make this sabzi at your end and enjoy with your family and friends. Do share your feedback too.

Tips and Suggestions by Mom Chef:-

  • This is no onion and no garlic recipe. But if you want you can use garlic and onion for preparing the gravy. Just grind both the ingredients along with tomato.
  • Prepare the mixture of the kofta just before frying. Else lauki/bottle gourd releases its water and the mixture will become watery.
  • Add gram flour/besan as required for binding. You can increase or reduce the quantity.
  • Adding paneer/cottage cheese in the gravy is completely optional.
  • Add kofta to the gravy just before serving.

Ingredients

  • Bottle Gourd/Lauki - 500 Gram
  • Besan/Gram flour - 4 Tablespoon
  • Red Chilli Powder - 1/2 Teaspoon
  • Salt - as per taste
  • Oil - as required for frying
  • INGREDIENTS FOR GRAVY:-
  • Tomato - 4 medium sized
  • Ginger - 1/2 inch piece
  • Green chilli - 1 or as per taste
  • Paneer/Cottage Cheese - 2 Tablespoon grated
  • Cumin seeds - 1 Teasoon
  • Mustard seeds - 1 Teaspoon
  • Hing/Asafoetida - 1/4 Teaspoon
  • Haldi/Turmeric Powder - 1/4 Teaspoon
  • Red Chilli Powder - 1 Teaspoon
  • Coriander Powder - 1 Teaspoon
  • Salt - as per taste
  • Oil - 1 Tablespoon
  • Coriander Leaves - as required for garnishing

Instructions

  1. PREPARING THE GRAVY:- Make puree of tomato along with ginger and green chilli.
  2. Heat oil in a pan. Then add asafoetida, cumin seeds and mustard seeds. Let the seeds crackle.
  3. Then add tomato puree and cook it on a low flame.
  4. Add salt, turmeric powder, red chilli powder, coriander powder. Mix well and cook on a low flame.
  5. Once the tomato puree gets thickened and oil leaves from sides, add grated paneer/cottage cheese. Mix well and cook.
  6. Then add water as required to make desired consistency. Boil it for couple of minutes. Then garnish it with chopped coriander leaves and switch off the gas.
  7. PREPARING THE KOFTA:-
  8. Peel and grate the lauki/bottle gourd.
  9. Add salt and red chilli powder and mix well. Then add besan/gram flour to it. Mix well and check the binding. Add more besan if required. Make round small balls out the mixture.
  10. Meanwhile, heat oil for frying.
  11. Fry the kofta on a medium-high flame until they turn nice golden brown. Once done, take them out.
  12. Add kofta to the gravy just before serving. Else they will be soggy.
  13. Delicious 'Lauki Kofta Sabzi ' is ready to be served.
