Leftover Rice Uttapam is a quick and delicious snack.

Leftover Rice Uttapam is a nice colorful, soft, and spicy dish. You can prepare it with easily available ingredients from your kitchen. It goes well with Green chutney or tomato ketchup. You can prepare it for snacks, dinner, lunch, or as an appetizer for a healthy evening snack. In addition, it is a nutritious dish using leftover cooked rice, semolina, curd, onion, coriander leaves, ginger, green chilli, and some spices.   • If you want, you can grind leftover rice in a mixer grinder instead of mashing it.
  • You can prepare this uttapam on a regular tawa instead of a pancake tawa.
  • You can use leftover rajma or chhole to make uttapam or tikki.
  • Add vegetables as per choice and availability.

Ingredients

  • Leftover cooked rice / Pake huye chawal - 1/2 Cup
  • Semolina / Sooji - 1/2 Cup
  • Curd / Dahi - 1/2 Cup
  • Salt - As per taste
  • Oil - As required
  • Onion / Pyaz - 1 Finely chopped
  • Green chilli / Hari mirchi - 2 to 3 Finely chopped
  • Ginger / Adarak - 1 Inch grated
  • Coriander leaves / Hara dhaniya - A handful
  • Red chilli powder / Lal mirch powder - As required (optional)
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Take leftover cooked rice in a bowl. Mash it using a masher. Add semolina and curd. Mix well to prepare medium thick consistency batter. Let it rest for 10 minutes. Then add salt and mix well.
  2. Meanwhile, Heat a pancake tawa. Add some drops of oil.
  3. Now fill the mold with the prepared batter. Add onion, green chilli, ginger, and coriander leaves to it. Sprinkle red chilli powder on it. Likewise, fill all molds.
  4. Then cover the pan with a lid and cook it on a medium flame for 2 to 3 minutes.
  5. Then flip it and cook it from another side as well. Once cooked, take it out on the serving plate.
  6. 'Leftover Rice Uttapam' is ready to be served.
