Ingredients

INGREDIENTS FOR STUFFING:-
Sattu flour - 1 to 1 & 1/2 cup
Onion - 1 finely chopped
Garlic - 2 to 3 buds finely chopped (optional)
Grated Ginger - 1/2 teaspoon
Green chilli - 1 to 2 finely chopped
Fresh Green Coriander leaves - a handful finely chopped
Salt - to taste
Red Chilli Powder - 1 teaspoon
Heeng powder/Asafoetida - 2 pinch (optional)
Ajwain/Carom seeds - 1/2 teaspoon
Nigella/Kaloji seeds - 1/2 teaspoon
Cumin/jeera - 1/2 teaspoon
Lemon juice - juice of 1/2 lemon
Muatard Oil - 1 to 1.5 teaspoon
INGREDIENTS FOR DOUGH:-
Whole Wheat flour - 2 cups
Besan/Gram flour - 1/2 tablespoon (optional)
Salt - as per taste
Ghee/Clarified Butter - 1 to 2 Tablespoon
Ajwain/carom seeds - 1/2 teaspoon (optional)

Instructions

Take whole wheat flour (thoda mota), besan/ram flour, salt,carom seeds and (soda if you want to add) in a mixing bowl. Mix well with hands. Add warm ghee as moyan to it. Rub well with both hands.
Now, add water to it and knead the flour. It should not be too hard nor too soft. Let the dough rest for 15 to 20 minutes.
Meanwhile. prepare the sattu masala/stuffing.
In a large bowl, add the sattu flour. Now add finely chopped onions, garlic, green chilli, ginger to it.
Add all spices listed like salt, red chilli powder, jeera/cumin seeds, ajwain/carom seeds, kalonji/nigella seeds, heeng/asafoetida. Add mustard oil and lemon juice to it and mix all well.
The masala should be moist in nature and not dry. So if required can sprinkle some water and make it moist.
Add chopped coriander leaves and mix. Stuffing is ready now.
Now, take the dough out and Knead and pound it well again with your fist.
Make small balls of equal size and roll it between palms to form round balls. Press slightly to make thick poori like shape and form cup like cavity in it.
Place a spoonful of ready sattu masala to stuff in the centre and cover from the sides to seal it properly. Gently roll it and press slightly to make litti balls. .
Brush them with ghee from all sides. Heat appe pan on gas on slow flame and place these littties in the appe cavities.
Cover lid and cook on low flame. Keep flipping the baati at regular intervals in between. Can add drop of ghee if needed.
Cook them on low flame till they change their color into light golden brown. You have to flip them in between to all sides to cook evenly. Check at regular intervals. It may take 10 to 12 mins to get ready.
Dip the littti In desired amount of ghee (as per taste) and serve hot with Aalu Chokha and/or tomato Chokha, Baigan ka Chokkha.
