  • Roast makhana for 2 to 3 minutes on a low flame. Stir it occasionally.
  • To check the makhana’s crispiness, Press it with your fingers, it should break easily with a popcorn-like sound.
  • Raw makhana can be used to prepare this dish.
  • The ratio of makhana, sooji, poha, and curd should be 1:1.
  • Water can be added to adjust the consistency of the uttapam batter.
  • If you want to make soft and fluffy uttapam, prepare a smooth and lumps-free batter.

Ingredients

  • Foxnuts / Makhana - 1 Cup Roasted
  • Semolina / Sooji - 1 Cup
  • Flattened Rice / Poha - 1 Cup
  • Curd / Dahi - 1 Cup whisked
  • Salt - As per taste
  • Water - As required
  • Ginger / Adrak - 1 Inch chopped
  • Green Chilli / Hari Mirch - 1 to 2 chopped
  • Capsicum (Red & Green) / Shimla Mirch - 1/4 Cup finely chopped
  • Onion / Pyaz - 1/2 Finely chopped
  • Sweet Corn - 1 tbsp
  • Red Chilli Flakes - 1/2 tsp
  • Oregano - 1/2 tsp
  • Coriander Leaves / Hara Dhaniya - A handful + For garnishing
  • Grated cheese - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Take makhana in a mixing bowl. Add sooji, poha, curd, and salt. Mix well. Add a little water and mix well. Let it rest for 10 minutes.
  2. After 10 minutes, add a little water to adjust the consistency. Then transfer it in a Philips grinding jar. Add ginger, green chilli, and a little water. Grind it for a few seconds to prepare its medium thick consistency batter. Take it out in a bowl.
  3. Now take capsicum, onion, sweet corn, red chilli flakes, oregano, and coriander leaves in a bowl. Mix well.
  4. Meanwhile, heat a tawa. Add some drops of ghee to it. Now add a ladle full of the prepared batter on the tawa to make a small sized uttapam. Likewise, make all uttapam.
  5. Now add the prepared veggie pizza mixture on all the uttapam. Slightly press it with your fingers/spoon.
  6. Cook it on a low flame for 1 to 2 minutes. Then flip it and cook it from another side as well.
  7. Add some drops of ghee to it. Cook it on a low flame for 1 to 2 minutes. Then flip it and add grated cheese on it. Garnish it with coriander leaves.
  8. Once cooked well, take it out on the serving plate.
  9. 'Makhana Pizza Uttapam' is ready to be served.
