Matar Makhane Ki Sabji is a simple and delicious dish made with roasted foxnuts in cashew, tomato-based gravy. The roasted makhana, fresh cream, and cashew give a rich and creamy taste. Tips and Suggestions by Mom Chef:

  • You can use frozen peas also.
  • Roast makhana for 5 to 7 minutes till becomes crunchy, check press with the fingers it should break easily with a popcorn-like sound.
  • You can use cream in place of malai.

Ingredients

  • Oil - 1 Tablespoon
  • Cumin Seeds / Jeera - 1 Teaspoon
  • Asafoetida / Hing - 1 Pinch
  • Bay Leaves / Tej Patta - 2
  • Dry Red Chili / Sukhi Lal Mirchi - 1
  • Onion / Pyaz - 1 Finely Chopped
  • FOR GRAVY :
  • Tomatoes / Tamatar - 4 Chopped
  • Green Chilli / Hari Mirchi - 1
  • Ginger / Adrakh - 1 Inch
  • Cashew / Kaju - 6 - 7
  • Red Chilli Powder / Lal Mirchi Powder - 1 Teaspoon
  • Turmeric Powder / Haldi Powder - 1/4 Teaspoon
  • Coriander seeds powder/Dhania powder - 1 Teaspoon
  • Roasted cumin seeds powder/Jeera powder - 1 Teaspoon
  • All spice mix powder/Garam Masala - 1/2 Teaspoon
  • Peas / Matar - 1 Cup Parboiled
  • Salt - As Per Taste
  • Water - As Required
  • Roasted Foxnuts / Makhana - 1 Cup
  • Coriander Leaves / Hara Dhaniya - 1/4 Cup Finely Chopped
  • Homemade Fresh Cream / Malai - 1 Tablespoon

Instructions

  1. Heat oil in a pan add cumin seeds, asafoetida, bay leaf, dry red chilli, onion and mix it well and saute it for 2 to 3 minutes.
  2. TO PREPARE GRAVY :
  3. Add tomatoes, green chili ginger and cashew in a grinding jar and prepare gravy.
  4. Now add prepared gravy in a pan and mix it well then add red chili powder, turmeric powder, coriander seeds powder, cumin seeds powder and mix it well then boil it 8 to 10 minutes till oil separates.
  5. Add all spice mix powder and dry fenugreek leaves by rubbing between your palm and mix it well.
  6. Now add parboiled peas, salt then mix it well and add water to adjust consistency.
  7. Add roasted foxnuts and mix it well, then add coriander leaves and fresh cream and mix it well again garnish the it with coriander leaves and transfer into a serving bowl.
  8. Matar Makhane Ki Sabji is ready to serve with roti, kulcha or paratha.
