Matar Paneer | Matar Paneer ki Sabji is a yummy and spicy sabji.

Matar Paneer | Matar Paneer ki Sabji is one of the most relishing Indian dish. The preparation is different at various places. Here, is an aromatic and delicious dish. It covers all the tips that will make this evergreen dish more delicious and lip-smacking. The use of ghee along with oil, adds flavor to it. The spices like red chili powder, coriander seeds powder, all spice mix powder makes it spicy and enjoyable. The whole spices like bay leaf, cardamom pod, cloves, black peppercorn makes it palatable and aromatic. It tastes great with hot roti or phulka. Tips and suggestions by the Mom Chef:-

  • You can either put ghee or butter.
  • If you want, you can add raw paneer cubes to the dish.
  • Put the red chili powder as per your taste.
  • The more you roast the spices with the gravy, the tastier the dish becomes.
  • Put the green peas in boiling water and boil them.
  • After boiling the green peas, put them in the chilled water so that the green color retains.
  • Adding ghee to the hot oil, helps to prevent the burning of spices.
  • Rubbing the dry fenugreek leaves between the palms, imparts the heat to it and it roasts slightly.
  • Adjust the gravy consistency as per your taste.

Ingredients

  • Oil - 1 tablespoon
  • Clarified butter/Ghee - 2 teaspoon
  • Cumin seeds/Jeera - 1 teaspoon
  • Bay leaf/Tej patta - 1 no
  • Cardamom pods/Elaichi - 2 no
  • Cloves/Laung - 2 no
  • Whole black peppercorn/Kali Miri - 4 to 5 no
  • Green chili/Hari mirch - 2 no slit
  • Onion/Pyaz - 1 big size (finely chopped)
  • Cottage cheese/Paneer cubes - 1/2 cup
  • Turmeric powder/Haldi powder - 1/2 teaspoon
  • Coriander seeds powder/Dhania powder - 1 to 1&1/2 teaspoon
  • Gram flour/Besan - 1 tablespoon (roasted)
  • Green Peas/Hare Matar - 1 cup (boiled)
  • Tomato/Tamatar - 4 no medium size
  • Green chili/Hari Mirch - 1 no
  • Ginger/Adrak - 1/2 inch
  • Red chili powder/Lal mirch powder - 1/2 teaspoon
  • All spice mix powder/Garam Masala - 1/2 teaspoon
  • Dry fenugreek leaves/Kasuri Methi - to taste
  • Coriander leaves - to garnish

Instructions

  1. Heat oil in a wok/kadhai and put 1 teaspoon ghee. Then, put the cumin seeds, bay leaf, cardamom pods, cloves and whole black peppercorn.
  2. Then, add the slit green chili and finely chopped onion. Saute on high flame.
  3. Heat 1 teaspoon of ghee in another pan. Place the paneer cubes and saute them, till golden to light brown in color.
  4. Saute the onions till they become brown in color. Meanwhile, take the tomatoes, ginger and one green chili in a mixer jar and grind to make tomato puree.
  5. Put the turmeric powder, coriander powder, roasted gram flour and the tomato puree to the wok/kadhai. Mix well. Add red chili powder and mix well.
  6. Then, put the green peas and little amount of water and mix well. Put the roasted paneer cubes, all spice mix powder, rub the dry fenugreek leaves between the palms and then add. Mix well and garnish with coriander leaves.
  7. The Matar Paneer | Matar Paneer ki Sabji is ready to be served.
