Methi Muthiya | Steamed Methi Muthiya is a delicious and very healthy breakfast ad snack.

Methi Muthiya | Steamed Methi Muthiya is a famous Gujarati dish. This is very extremely nutritious snack and breakfast with amazing taste. You can have it as a breakfast or evening tea-time snack. This has different types of flour, fenugreek leaves, some spices and seeds. This goes well with any type of chutney and dip. This is a very healthy alternative for fried snacks. You can easily prepare the muthiya at home. This can be a good tiffin snack for kids and they will love it. So, try to make this delicious snack at home and let us know how was it.

This recipe was prepared by Bharti Mehta – A lovely Mom with 65 plus years of cooking experience. 

Tips and Suggestions by Mom Chef:-

  • You can use different types of flours or multigrain flour.
  • Adding achar masala gives a nice flavour to the dish but it is completely optional.
  • Do not use red chilli powder because the colour of muthiya may change. You can add green chilli paste more if you want to make it spicy.
  • You can use rice flour instead of cooked rice.
  • Wash and dry the fenugreek leaves completely before making the dough. Else, the moisture content will be more.
  • To maintain the green colour of fenugreek leaves, baking soda is used.

Ingredients

  • Methi/Fenugreek Leaves - 3 Cup
  • Maize Flour/Makai Aata - 1/2 Cup
  • Gram Flour/Besan - 1/2 Cup
  • Sorghum flour/Jwar Aata - 1/2 Cup
  • Whole Wheat Flour - 1/2 Cup
  • Fresh Curd - 1 Cup
  • Cumin seeds - 1/2 Teaspoon
  • Achar Masala - 1 Teaspoon
  • Asafoetida/hing - a pinch
  • Sesame seeds - 1/2 Teaspoon
  • Ginger-Green Chilli paste - 2 Teaspoon
  • Salt - as per taste
  • Baking Soda - a pinch
  • Cooked rice - 1 Cup
  • Turmeric powder - 1/4 Teaspoon
  • Coriander leaves - 1 cup chopped
  • Lemon - 1/2
  • Sugar - 2 Teaspoon
  • Oil - 2 Tablespoon
  • Eno (fruit salt) - 1 Packet
  • INGREDIENTS FOR TADKA:-
  • Oil - 1 Tablespoon
  • Mustard seeds - 1/2 Teaspoon
  • Dry Red Chilli - 5
  • Curry Leaves - few
  • Sesame Seeds - 1 Teaspoon
  • Hing/Asafoetida - a pinch
  • OTHER INGREDIENTS:-
  • Coriander leaves - as required
  • Fresh grated coconut - as required

Instructions

  1. Take a kadai/vessel/steamer. Add water and place stand and perforated plate. Heat it.
  2. Take another pan, add oil and heat it. Add asafoetida.
  3. Add chopped methi leaves. Then add baking soda, salt, cumin seeds, achar masala, sesame seeds. Mix well and saute it.
  4. Then add cooked rice and mix well. Turn off the gas.
  5. Add fresh curd and mix well. Add turmeric powder, chopped coriander leaves, lemon juice, sugar. Mix well.
  6. Now, add maize flour, gram flour, sorghum flour, and whole wheat flour. Mix well.
  7. Take a bowl and add eno/fruit salt. Add 1 Tablespoon water. Pour this into pan. Mix well to make a dough.
  8. Divide the mixture into equal portion. Make muthiya by pressing in between palm and fingers.
  9. Steam the muthiya for about 20 minutes. Then let it cool completely. Cut into small pieces,
  10. PREPARING TADKA:-
  11. Heat oil in a pan.
  12. Add mustard seeds and let them splutter. Then add dry red chilli, curry leaves, sesame seeds, asafoetida. Saute it.
  13. Then add muthiya pieces. Mix lightly for 2 minutes. Then turn off the gas. Transfer to a serving bowl. Garnish with chopped coriander leaves and fresh grated coconut.
  14. Delicious 'Methi Muthiya | Steamed Methi Muthiya' is ready to be served.
