Mix Veg Paratha – Punjabi Style is a delicious as well as nutritious paratha for all family members.

Mix Veg Paratha – Punjabi Style is a stuffed paratha which has a delicious taste. It is full of veggies and flavours which makes it very healthy as well as tasty paratha. You can easily prepare this paratha for breakfast or a tiffin snack for all family members. It is a complete meal in itself as it uses lots of veggies with paneer. It is too yummy that everyone will demand more and kids will eat all the veggies happily in the paratha. So, try to make this yummy paratha at home and enjoy with your loved ones.

Tips and Suggestions by Mom Chef:-

  • You can use veggies as per the availability and choice.
  • More the stuffing the tastier will be the paratha.
  • To make a perfect stuffed paratha, roll it lightly from edges to the centre. This will make the stuffing intact and the stuffing spreads evenly.
  • While roasting, once the paratha gets light spots on both the sides then only apply ghee/clarified butter.
  • You can use oil too for roasting the paratha. But boasting the paratha with ghee enhances the flavour. So, do make it with ghee.
  • Press the paratha with spoon/spatula and roast it in a circular direction. This method will cook the stuffing well.

Ingredients

  • Whole Wheat Dough - as required
  • Grated Cauliflower - 1 Teaspoon
  • Boiled potato - 1 Teaspoon mashed
  • Grated Carrot - 1 Teaspoon
  • Paneer/Cottage Cheese - 1 Teaspoon grated
  • Grated Mooli/Radish - 1 Teaspoon
  • Onion - 1 Teaspoon finely chopped
  • Methi/Fenugreek leaves - 1 Teaspoon finely chopped
  • Coriander Leaves - 1 Teaspoon finely chopped
  • Mint leaves - 1/2 Teaspoon finely chopped
  • Grated Ginger - 1/4 Teaspoon
  • Green Chilli - 1/4 Teaspoon finely chopped
  • Anardana powder/Dry Pomegranate Seeds Powder - 1/2 Teaspoon
  • Amchur/Dy mango powder - 1/2 Teaspoon
  • Red Chilli Powder - 1/2 Teaspoon
  • Coriander powder - 1/4 Teaspoon
  • Salt - as per taste
  • Ghee/Clarified Butter - as required for roasting the paratha

Instructions

  1. Take a bowl and grated cauliflower, mashed boiled potato, grated carrot, radish, paneer/cottage cheese, ginger, finely chopped fenugreek leaves, coriander leaves, mint leaves, green chilli, anardana powder, red chilli powder, salt, dry mango powder, coriander powder. Mix well.
  2. Take a small portion of the dough. Dust it with flour and roll it to make small roti.
  3. Put the stuffing on it and make pleats to seal it. Press it lightly.
  4. Dust it with flour and roll it with light hands from edges to the center to make paratha.
  5. Meanwhile, heat a tawa.
  6. Cook the paratha on a medium flame from both sides. Once it gets cooked little bit from both the sides, apply ghee and roast it by pressing with a spatula in circular manner.
  7. When cooked, take out on a plate. Put a dollop of butter on the top.
  8. Delicious 'Mix Veg Paratha - Punjabi Style ' is ready to be served with chutney, pickle and curd.
