Mix Veg Sabji | Dhaba Style Mix Vegetable Sabzi is a healthy and nutritious vegetable-loaded dish. This sabji needs vegetables, paneer, and some spices. The style to prepare this sabji is very unique. All vegetables are fried then cooked in onion-tomato based gravy. You can consume it as a high-fiber and carbohydrate dish for any time meal. It goes well with hot roti, naan, kulcha, or any type of paratha. In addition, it is a perfect dish for weekends or for guests. Ingredients

  • Oil - 1 & 1/2 tbsp + For frying
  • Cumin seeds / Jeera - 1 tsp
  • Asafoetida / Hing - A pinch
  • Ginger-green chilli-garlic paste / Adrakh-hari mirchi-lahsun paste - 1 tsp
  • Onion / Pyaz - 1 Finely chopped
  • Salt - As per taste
  • Tomato / Tamatar - 2 Finely chopped
  • Red chilli powder / Lal mirch powder - 1 tsp
  • Cumin seeds powder / Jeera powder - 1 tsp
  • Coriander powder / Dhaniya powder - 1 tsp
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Water - As required
  • Dry fenugreek leaves / Kasuri methi - 1 tsp
  • Coriander leaves / Hara dhaniya - A handful + For garnishing
  • All spice mix powder / Garam masala - 1 tsp + 1/4 tsp
  • Potato / Aloo - 2 Chopped
  • Green peas / Hare matar - 1 Cup
  • Carrot / Gajar - 1/2 Cup finely chopped
  • French beans / Beans - 1/2 Cup finely chopped
  • Cauliflower / Phulgobhi - 1 Cup chopped
  • Cottage cheese / Paneer - 1 Cup diced
  • Fresh cream / Homemade malai - 1 tbsp
  • Green chilli / Hari mirchi - 2 Slited
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR FRYING VEGETABLES :
  2. Heat oil in a pan to fry vegetables. Add potato and fry it for a few seconds on a medium flame.
  3. Then add green peas, carrot, french beans, and cauliflower. Deep fry them on a medium flame for 2 to 3 minutes until they fried well.
  4. Then, take them out on a plate using a slotted spoon. Keep it aside.
  5. Now add paneer to the hot oil. Deep fry it on a medium flame for 1 to 2 minutes until it turns golden brown from all sides. Then, take them out on a plate using a slotted spoon. Keep it aside.
  6. FOR PREPARING MIX VEG SABJI :
  7. Heat oil in a pan. Add cumin seeds, asafoetida, and ginger-green chilli-garlic paste. Mix well and saute it for a few seconds on high flame.
  8. Then add onion and mix well. Now add salt. Mix well and saute it for 1 to 2 minutes on a medium flame..
  9. Further, add tomato. Mix well. Add red chilli powder, cumin seeds powder, coriander powder, and turmeric powder. Mix well and saute it for 2 to 3 minutes on medium flame till the oil separates. Stir it occasionally.
  10. Then add little water. Mix well. Now add dry fenugreek leaves, 1 tsp of all spice mix powder, and coriander leaves. Mix well and saute it for 1 to 2 minutes on a medium flame.
  11. Now add fried vegetables and little water. Mix well. Then add fried paneer, fresh cream, green chilli, and 1/4 tsp of all spice mix powder. Mix well and garnish it with coriander leaves.
  12. Once done, take it out to a serving bowl.
