Ingredients

  • FOR BOILING VERMICELLI :
  • Water - 2 Cups
  • Vermicelli / Sewaiyan - 1 Cup roasted
  • Salt - As per taste
  • Oil - 1 tsp
  • FOR PREPARING MIX VEG VERMICELLI :
  • Oil - 2 tbsp
  • Black gram / Urad dal - 1 tsp (optional)
  • Bengal Gram / Chana dal - 1 tsp (optional)
  • Mustard seeds / Rai - 1 tsp
  • Asafoetida / Hing - A pinch
  • Green chilli / Hari mirch - 2 Slited
  • Curry leaves / Curry patta - A few
  • Onion / Pyaaz - 1 Finely chopped
  • Beans - 1/2 Cup finely chopped
  • Carrot / Gajar - 1 Finely chopped
  • Capsicum / Shimla mirch - 1/2 Finely chopped
  • Salt - As per taste
  • Green peas / Matar - 1/4 Cup
  • Fresh coconut / Nariyal - 2 tbsp grated
  • Lemon juice / Nimbu ka ras - Of 1/2 lemon
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR BOILING VERMICELLI :
  2. Boil water in a pan. Add salt, oil, and vermicelli. Mix well. Boil it for 3 to 4 minutes on a high flame.
  3. Once vermicelli is cooked well, turn off the flame and strain it. Keep it aside.
  4. FOR PREPARING MIX VEG VERMICELLI :
  5. Heat oil in a pan. Add black gram, bengal gram, mustard seeds, asafoetida, green chilli, curry leaves, and onion. Mix well and saute it for a few seconds on high flame.
  6. Then add beans, carrot, capsicum, and salt. Mix well. Cover the pan with a lid and cook it for 1 to 2 minutes on high flame.
  7. Now add boiled vermicelli and mix well. Then add green peas and fresh coconut. Mix well.
  8. Once done, turn off the flame and slightly let it cool down. Then add lemon juice and take it out to a serving plate.
  9. 'Mix Veg Sewaiyan | Mix Veg Vermicelli' is ready to be served.
