Moong Dal Ki Khasta Kachori is a most lovable and delicious snack. 

Moong Dal Ki Khasta Kachori is crunchy snack filled with spicy moong dal/yellow lentil filling. This is a very popular street food across India. You can very easily make this snack at home with readily available ingredients. This is super crunchy and flavourful kachori. This needs some tips and tricks to make a perfect khasta kachori. So, follow this recipe to make perfect kachori at home and enjoy with your family and friends. Do share your feedback as well.

Tips and Suggestions by Mom Chef:-

  • You can adjust the spiciness according to your taste.
  • Add dry spices after the dal gets cooked. But do not overcook the dal.
  • Knead a smooth and soft dough for outer covering.
  • You can fill the stuffing less or more as per your choice.
  • First heat the oil for frying then switch off the flame.
  • When the oil is little hot add the kachori for frying. Once they float on oil switch on the flame. This will make the kachori smooth.

Ingredients

  • INGREDIENTS FOR STUFFING:-
  • Moong dal/ Yellow lentil/ Green gram without skin - 1 Cup soaked
  • Besan/ Gram flour - 2 to 3 Tablespoon
  • Hari mirch/ Green chilli - 1 to 1 & 1/2 Teaspoon
  • Adrak paste/ Ginger paste - 1 Teaspoon
  • Hing/ Asafoetida - a pinch
  • Jeera/ Cumin seeds - 1/2 Teaspoon
  • Dry Laal mirch/ Dry Red chilli - 1
  • Dalchini/ Cinnamon - 1 small stick
  • Badi elaichi/ Black cardamom - 1
  • Haldi powder/ Turmeric powder - 1/2 Teaspoon
  • Laal mirch powder/ Red Chilli powder - 1 Teaspoon
  • Saunf powder/ Fennel seeds powder - 1 Teaspoon
  • Kala namak/ Black salt - 1/2 Teaspoon
  • Garam masala/ All spice mix - 1/2 Teaspoon
  • Amchur powder/ Dry Mango Powder - 1 Teaspoon
  • Sabud Dhaniya/ Whole Coriander seeds - 1/2 Teaspoon
  • Dhaniya patta/ Coriander leaves - 2 Tablespoon chopped
  • Namak/ Salt - as per taste
  • Oil - 2 Tablespoon + for frying
  • INGREDIENTS FOR DOUGH:-
  • Maida/ Refined Flour - 2 Cup
  • Oil - 1 to 2 Tablespoon + for greasing
  • Namak/ Salt - as per taste

Instructions

  1. PREPARING THE DOUGH:-
  2. Mix well refined flour, oil, and salt in a bowl. The flour should bind, but if it does not, add a little more oil. Add water to make a soft dough. Grease the dough with oil and knead it for 2 to 3 minutes. Keep aside.
  3. PREPARING THE STUFFING:-
  4. Heat 2 tablespoon oil in a pan.
  5. Add dry red chilli, cinnamon stick, black cardamom, asafoetida, green chilli paste, and ginger paste. Sauté well. Then add turmeric powder. Mix well.
  6. Add gram flour/besan and sauté it on a low flame for 2 to 3 minutes.
  7. Add soaked and drained moong dal. Mix well. Sprinkle some water, cover and cook for 2 to 3 minutes.
  8. Then add red chilli powder, fennel seeds powder, black salt, whole coriander seeds, garam masala, dry mango powder, and coriander leaves. Mix well then turn off the flame. Add salt and mix well. Let it cool.
  9. PREPARING KACHORI:-
  10. Heat oil for frying. Once the oil is hot, turn off the flame.
  11. Meanwhile, knead the dough using a little oil. Then take a small portion of the dough.
  12. Flatten the dough with fingers and put the stuffing in it. Seal it properly and flatten it a little bit.
  13. Put the kachori into the pan for frying. Put 4 to 5 kachoris at a time.
  14. Once they float on oil, turn on the flame again. Keep the flame low. Once the kachori tuns golden brown at the bottom, flip it and fry it.
  15. When the kachori turns golden brown from all the sides, take it out.
  16. Delicious 'Moong Dal Ki Khasta Kachori' is ready to be served.
