Nankhatai is a very popular dessert which we are eating since our childhood. In our childhood, there was no microwave or oven so our mothers made this in cooker. But now we have other options also. We can make in a microwave or oven. I made this in the cooker to remember my mother’s hand nankhatai. So, try to make this Indian biscuit at home and let us know your feedback.

Ingredients

  • Maida/Refined flour -1 cup
  • Besan/Gram Flour - 2 Tablespoon
  • Sooji/Semolina - 2 Tablespoon
  • Elaichi/Cardamom powder - 1/2 Teaspoon
  • Baking powder - 1/2 Teaspoon
  • Ghee/Clarified Butter OR Oil - 1/2 cup
  • Sugar - 3/4cup
  • Pistachios and almond - as required for garnish
  • Salt for cooker preheating

Instructions

  1. Mix besan/Gram flour, Semolina/suji, refined flour/maida in bowl.
  2. In another bowl, take the ghee or oil with sugar and beat it nicely until it becomes fluffy Then add elaichi/cardamom powder, baking powder and mix nicely
  3. Then mix the dry ingredients with wet ingredients. Mix them properly and make the dough.
  4. Take the pressure cooker without whistle and rubber and keep the salt inside and preheat on medium high flame for 15 minutes.
  5. Take the plate and grease with oil or ghee. Make small round balls from that dough and keep them on plate. Make the cross with the help of knief and decorate with almond and pista and keep these on some distances on this grease plate.
  6. Now keep this plate into the cooker and bake them for 20 minute. In between check those cookies.
  7. When they will become light golden brown they will be ready. Take out nankhatai from the cooker and let it be cool.
  8. Delicious 'Nankhatai' is ready to be served.
