Ingredients

  • Spinach / Palak - 1/2 Bunch chopped
  • Onion / Pyaz - 1 Finely chopped
  • Green chilli / Hari mirchi - 2 to 3 Finely chopped
  • Ginger paste / Adrakh paste - 1/2 Teaspoon
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • Red chilli powder / Lal mirch powder - 1 Teaspoon
  • All spice mix powder / Garam masala - 1/4 Teaspoon
  • Fennel seeds / Saunf - 1 Teaspoon crushed
  • Chaat masala - 1 Teaspoon
  • Dry mango powder / Aamchur - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Gram flour / Besan - 3 to 4 Tablespoons
  • Oil - For frying

Instructions

  1. Take washed spinach. Chop it.
  2. Take spinach in a bowl. Add onion, green chilli, ginger paste, salt, turmeric powder, red chilli powder, all spice mix powder, roasted cumin seeds powder, fennel seeds, chaat masala, dry mango powder, asafoetida, and gram flour. Mix well to form it into a dough.
  3. Prepare vada mixture without water. If the mixture becomes dry add little water.
  4. Then grease hands with oil. Take a small portion of the mixture on the palm. Prepare round-shaped vada with hands then slightly press it and prepare flattened vada. Likewise, prepare all vadas.
  5. Meanwhile, heat oil in a pan. Fry all vada on a medium flame for 5 minutes.
  6. When all vada turns nice golden brown from both sides, take them out on a serving plate.
  7. 'Palak Vada | Spinach Vada' is ready to be served.
