Bedai is a fried kachori that you can make with whole wheat flour, urad dal paste, and some spices of your choice to enhance its taste. Ingredients

  • FOR PREPARING THE STUFFING-
  • Paneer/ Cottage cheese - 1 cup
  • Namak/ Salt - as per taste
  • Coriander leaves - a handful finely chopped
  • OTHER INGREDIENTS-
  • Whole Wheat flour/ Gehu ka atta - 1 cup
  • Namak/ Salt - as per taste
  • Oil - as required + for frying
  • Laal mirch powder/ Red chilli powder - as per taste
  • Saunf powder/ Fennel seeds powder - 1/2 teaspoon
  • Hing/ Asafoetida - a pinch
  • Water - as required
  • Urad dal/ Split black gram - 1/2 cup

Instructions

  1. Soak urad dal in water for around 6 hours and then grind it to make fine paste.
  2. In a bowl, add paneer, salt, and coriander leaves in it and mix them well.
  3. In a bowl, add whole wheat flour, urad dal, salt, red chilli powder, fennel seeds powder, asafoetida, and oil to it and mix it well. Add water in small amounts to make a smooth dough.
  4. Take small portion of the dough and make small balls. Fill the paneer stuffing in it and seal the ends to make a ball. Flatten it gently and make it into like puri.
  5. Meanwhile heat oil in a pan and drop the puris in it carefully. Fry it until it turns golden brown in colour.
  6. Paneer Dal Stuffed Bedai is ready to be served.
