Papad Mangodi Ki Sabzi is a very popular traditional delicacy. 

Papad Mangodi Ki Sabzi is mouthwatering preparation which most lovable of all. It is a classic dish from Marwadi cuisine from Rajasthan. The mangodi is cooked in the tomato based gravy and roasted or raw papad is added to the curry. This tastes amazing with roti/paratha and even with rice. This is very easy to prepare with minimal ingredients. This is a perfect option to impress your guest or when you do not vegetables at home. It will be a lifesaver recipe as well. Ingredients

  • Magodi/Badiya - 1 Cup
  • Roasted Papad - 2
  • Ginger - 1 inch piece grated
  • Green Chilli - 2 Chopped
  • Tomato - puree of 2 tomato
  • Turmeric powder - 1/2 Teaspoon + 1/4 Teaspoon
  • Red Chilli Powder - 1 Teaspoon
  • Coriander Powder - 1 Talespoon
  • Garam Masala/All spice Mix - 1/2 Teaspoon
  • Kasuri Methi/Dry Feugreek Leaves - 1/2 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Asafoetida/Heeng - a pinch
  • Salt - as per taste
  • Ghee/Clarified Butter - 2 Tablespoon + 1 Teaspoon for roasting
  • Coriander Leaves - as required for garnishing

Instructions

  1. Crush the mangodi/badiya. Heat 1 teaspoon ghee in a pan. Roast the mangodi on a low flame for 2 to 3 minutes. Then pressure cook with a glass of water for 1 whistle.
  2. Meanwhile, heat 2 tablespoon ghee in a pan/kadai.
  3. Add asafoetida and cumin seeds. Let the seeds crackle.
  4. Add grated ginger then green chilli. Saute it for few seconds.
  5. Take tomato puree in a bowl. Add salt, turmeric powder, red chilli powder, coriander powder. Mix well. Add this mixture in kadai. Mix and saute it.
  6. Once the ghee leaves the masala, add boiled mangodi. Mix well and cook it on a low flame for a minute.
  7. Add garam masala, kasuri methi. Mix well.
  8. Add crushed roasted papad. Mix well. Add little water. Cook it for 2 minutes.
  9. Garish the curry with coriander leaves and switch off the gas.
  10. Delicious 'Papad Mangodi Ki Sabzi | Rajasthani Papad Badiye Ki Sabzi' is ready to be served.
