Pittod Ki Sabzi | Rajasthani Pitod Ki Sabji is a traditional delicacy of Rajasthan.

A lip-smacking curry is Pittod Ki Sabzi | Rajasthani Pitod Ki Sabji. This is a famous and most lovable curry in Rajasthan that goes well with roti, paratha and rice. It is a perfect option when you have a shortage of green vegetables at home. This curry is very simple and easy to make. You just require gram flour/besan, curd and some spices. Moreover, this does not contain onion and garlic that makes it suitable for all. You can have it for lunch or dinner even in the lunch box. So, try to make this special curry at home and enjoy with your family.

Tips and Suggestion By Mom Chef:-

  • Do not throw the residue of pittod. You can add this to the gravy.
  • You can avoid adding green chillies to the curry. Adjust the spices according to your taste.

Ingredients

  • INGREDIENTS FOR PITTOD:-
  • Besan/Gram Flour - 1/2 Cup
  • Salt - as per taste
  • Red Chilli Powder - as per taste
  • Cumin Seeds - 1/2 Teaspoon
  • Water - as required
  • INGREDEINTS FOR GRAVY:-
  • Curd - 2 Tablespoon
  • Coriander powder - 1 Teaspoon
  • Red Chilli Powder - 1/2 Teaspoon or as per taste
  • Salt - as per taste
  • Asafoetida - a pinch
  • Cumin seeds - 1/2 Teaspoon
  • Green chilli - 1 chopped
  • Dry Mango Powder - 1/4 Teaspoon or as per taste
  • Coriander leaves - as required for garnishing
  • Ghee/Clarified Butter OR Oil - 1 Tablespoon

Instructions

  1. PREPARING THE PITTOD:-
  2. Take a kadai and add gram flour, salt, red chilli powder, cumin seeds. Add water to make thin consistency batter. It should be lumps free.
  3. Now put the kadai on flame. Cook the mixture on a high flame while stirring continuously.
  4. When the mixture gets thickened and comes together then switch off the gas. Immediately transfer the mixture on a big plate. Spread the mixture evenly. Let it cool.
  5. PREPARING THE GRAVY:-
  6. Heat a pan and ghee and melt it.
  7. Add asafoetida and cumin seeeds. Let is splutter.
  8. Take a bowl and add curd, red chilli powder, coriader powder, turmeric powder, salt. Mix well. Add this mixture to the pan. Keep stirring the mixture and cook it on medium flame..
  9. Add water to the residue of pittod in a kadai. Mix well. Add green chillies and dry mango powder. Mix.
  10. Once the ghee appears on the top of gravy, add water mixture to it. Mix well and cook it on a low flame.
  11. Cut the pittod in diamond shape or any desired shape.
  12. Add pittod to the gravy. Cook it for a minute then switch off the gas.
  13. Delicious 'Pittod Ki Sabzi | Rajasthani Pitod Ki Sabji' is ready to be served.
