Pineapple Halwa | Pineapple Kesari | Pineapple Sheera is a very popular sweet dish in the Southern parts of India. In places like Bengaluru, it is popular by the name of Kesari Bhaat. It is also a occasion special dish, on festivals like Basant Panchami. The dry fruits like cashew nuts & raisins along with pineapple fruit makes it a tasty sweet dish. Ingredients

  • Ghee/ Clarified butter - 2 to 5 tablespoon
  • Kaju/ Cashew nuts - 10 to 15 no
  • Kishamish/ Raisins - as required
  • Annanas/ Pineapple - 1 cup full (small chopped pieces)
  • Rava/ Sooji/ Semolina - 1 cup full
  • Cheeni/ Sugar - 1 cup full
  • Water - 3 cups
  • Laung/ Cloves - 1 to 2 no
  • Kesar/ Saffron strands - 3 to 4 no
  • Elaichi/ Cardamom seeds powder - 1/2 teaspoon
  • Ghee/ Clarified butter - as required (for serving)

Instructions

  1. In a wok/kadhai, take 2 Tbsp of ghee, add cashew nuts and roast on a low flame till it is light brown in colour. Then add the raisins and roast them. Add pineapple pieces, mix well, and then add sugar.
  2. Keep the flame low, then add three cups of water, mix well and allow it boil on a medium to high flame. Meanwhile, roast the semolina.
  3. In a pan, take 3 to 3&1/2 Tbsp of ghee, add sooji/semolina and roast it on a low flame. Stir it continuously on a low flame for 5 minutes. Add cloves and saffron strands to the pineapple-sugar mixture. Then add the cardamom powder to the mixture. Mix well.
  4. After 5 minutes, start adding the roasted sooji. As the pineapple mixture is boiling, slowly put the roasted sooji in small quantities so that lumps do not form.
  5. Mix well, put 1 Tbsp of ghee, cover and cook again for 5 minutes. Take a small portion of sheera in a small bowl, place it on a plate, flip it, and serve it.
  6. ‘Pineapple Halwa | Pineapple Kesari | Pineapple Sheera’ is ready to serve.
