Pudina Paneer Sabzi is a lip-smacking sabzi for everyone. 

Pudina Paneer Sabzi is an innovative recipe using pudina/mint leaves. This is a creamy and flavourful curry that goes well with roti and paratha. This is quick and easy to prepare using fewer easily available ingredients. This has a sweet and creamy texture of cashew and malai/homemade cream with a nice flavour of pudina/mint leaves. Tips and Suggestions by Mom Chef:-

  • Use fresh curd to make the gravy as it will not turn sour.
  • Adding milk instead of water makes the gravy creamier.
  • Make this sabzi using homemade paneer.
  • To soften the paneer, soak it in hot water for a minute.

Ingredients

  • Paneer/ Cottage cheese - 100 Gram
  • Pudina/ Mint leaves - a handful
  • Chopped Pyaaz/ Onion - 2 Tablespoon
  • Hari mirch/ Green chilli - 1
  • Adrak/ Ginger - 1/2 inch piece
  • Homemade Cream/ Malai - 1 Tablespoon + for garnishing
  • Dahi/ Curd - 1 Tablespoon
  • Doodh/ Milk - 1/2 Cup + as required
  • Kaju/ Cashew nuts - 8
  • Khus Khus/ Poppy seeds - 1 Teaspoon
  • Kali mirch/ Black pepper corns - 4 to 5
  • Laung/ Cloves - 4 to 5
  • Green cardamom/ Hari elaichi - 2
  • Butter - 1 Teaspoon
  • Namak/ Salt - as per taste

Instructions

  1. Soak the cashew nuts and poppy seeds in 1/2 cup milk for at least 1 hour.
  2. Take a grinder jar and add mint leaves, soaked cashew nuts and poppy seeds along with milk, cloves, black peppercorns, 1 green cardamom, chopped onion, homemade cream/malai, curd, green chilli, and ginger. Grind all the ingredients to make a smooth paste.
  3. Take a pan, add butter and heat it on a low flame.
  4. Crush 1 cardamom and add its seeds to the pan.
  5. Then add ground paste and cook it on a low flame while stirring it. Add a little milk if required.
  6. Cook the gravy for a couple of minutes. Add salt and mix well.
  7. Once the gravy starts leaving the pan, add paneer cubes. Mix well and cook. You can add a little milk if the gravy thickens.
  8. Cover the pan and let it cook for 30 seconds to 1 minute. Then turn off the flame.
  9. Delicious 'Pudina Paneer Sabji' is ready to be served. Garnish it with homemade cream/malai and mint leaves and serve.
