Puliyogare Gojju | Tamarind Rice is made with tamarind extract and dry spices. Gojju is prepared and then mixed with cooked rice and serve. This dish is commonly made in south Indian homes and even served as prasadam not only in temples but also in places where religious ceremonies like pooja are held. Moreover, the tamarind extract is spiced with dry spices, jaggery and thus making a combination of flavor and taste to make this gojju extract and it can be stored as well. Tips and Suggestions by a Mom Chef:
- Tamarind can be soaked in hot water as well.
- When gojju is prepared, it can be stored for 10 to 15 days in the refrigerator.
- If gojju is not becoming thick, roasted til powder should be added.
- Roasted til powder can be stored for a month.
- If puliyogare gojju rice becomes a little watery, some roasted til powder should be added to the puliyogare gojju to make it dry.
- Peanuts can be roasted while preparing the tadka.
