  • The curd should be sour and at room temperature.
  • If desired, kasuri methi can add instead of green fenugreek leaves.
  • The kadhi should be well boiled to make it tastier.
  • You can add fresh fenugreek leaves or kasuri methi to the pakora batter.
  • If you want, baking soda can add to the pakora batter.
  • The pakora size should be smaller for better taste.
  • Adjust the consistency of kadhi as per choice.

Ingredients

  • FOR PREPARING PUNJABI KADHI :
  • Oil - 1 Tablespoon
  • Mustard seeds / Rai - 1/2 Teaspoon
  • Cumin seeds / Jeera - 1/2 Teaspoon
  • Carom seeds / Ajwain - 1/2 Teaspoon
  • Onion / Pyaz - 1 Finely chopped
  • Ginger-garlic paste / Adrakh-lahsun paste - 1 Teaspoon
  • Curd / Dahi - 2 Cups
  • Gram flour / Besan - 2 Tablespoons
  • Red chilli powder / Lal mirchi powder - 1 Teaspoon
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Coriander powder / Dhaniya powder - 1/2 Teaspoon
  • All spice mix powder / Garam masala - 1/4 Teaspoon
  • Tomato / Tamatar - 1 Grated (optional)
  • Salt - As per taste
  • Fenugreek leaves / Hari methi - 1/2 Cup chopped
  • Water - 2 Cups
  • FOR PREPARING PAKORA :
  • Gram flour / Besan - 1 Tablespoon
  • Onion / Pyaz - 1 Finely chopped (optional)
  • Carom seeds / Ajwain - 1/4 Teaspoon
  • Coriander powder / Dhaniya powder - 1/2 Teaspoon
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • Red chilli powder / Lal mirchi powder - 1/4 Teaspoon
  • Salt - As per taste
  • Water - As required
  • Oil - For frying
  • FOR PREPARING TADKA :
  • Clarified butter / Ghee - 2 Teaspoons
  • Cumin seeds / Jeera - 1/2 Teaspoon
  • Dry red chilli / Sukhi lal mirchi - 1
  • Garlic / Lahsun - 5 to 6 Cloves finely chopped
  • Dry fenugreek leaves / Kasuri methi - 1 Teaspoon
  • Red chilli powder / Lal mirchi powder - 1/2 Teaspoon

Instructions

  1. FOR PREPARING PAKORA :
  2. Take gram flour in a bowl. Add onion, carom seeds, coriander powder, turmeric powder, red chilli powder, and salt. Mix well. Add little water to prepare medium thick consistency batter.
  3. Meanwhile, heat oil in a pan. Take a small portion of batter and place it in the heated oil using a spoon. Likewise, prepare all pakoras.
  4. Fry them from all sides on a medium flame for 2 to 3 minutes. Once they turn nice golden brown, take them out to a plate. Keep it aside.
  5. FOR PREPARING PUNJABI KADHI :
  6. Take curd in a bowl. Add gram flour. Mix it well with a whisker. Add red chilli powder, turmeric powder, coriander powder, and all spice mix powder. Mix well. Keep it aside.
  7. Heat oil in a pan. Add mustard seeds, cumin seeds, carom seeds, onion, and ginger-garlic paste. Saute it for 1 to 2 minutes on a high flame.
  8. Then add tomato. Mix well and saute it for 1 minute on a high flame.
  9. Now add salt and fenugreek leaves. Mix well. Then add the prepared curd mixture. Mix well.
  10. Cook it on high flame till comes to one boil. Then add water. Mix well. Now keep the flame low and boil it for 40 minutes. Keep stirring occasionally.
  11. Now add prepared pakora to the kadhi. Mix well. Boil it for more 5 minutes. Keep stirring occasionally. Once done, take it out to a serving bowl.
  12. FOR PREPARING TADKA :
  13. Heat ghee in a tadka pan. Add cumin seeds, dry red chilli, and garlic. Saute it for 30 seconds. Then add dry fenugreek leaves and red chilli powder. Turn off the flame and pour it on kadhi.
  14. 'Punjabi Kadhi | Punjabi Kadhi Pakora' is ready to be served with rice.
