Pyaaz Ki Kachori – Jodhpur Famous is a unique snack.

Pyaaz Ki Kachori – Jodhpur Famous is a different type of kachori. The filling of the kachori makes it yummy and enjoyable. This is a new addition to the monsoon special snack. It tastes great with tomato sauce and chutney. It is a perfect tea-time snack. The tips are easy to follow. These tips and the step by step instructions will help you to make a fluffy kachori. Tips and Suggestions by Mom Chef:-

  • If you want, you can use oil, in place of ghee for moyan.
  • You can make kachori using the whole wheat flour or by mixing wheat flour and all purpose flour.
  • For kneading the dough, use the water at room temperature.
  • The kachori filling should be cool, so that the kachori does not break.
  • You can add more amount of onion while making the filling.

Ingredients

  • FOR DOUGH:
  • All purpose flour/Maida - 2 Cup
  • Clarified butter/Ghee - 3 tablespoon
  • Salt - to taste
  • Water - as required
  • FOR KACHORI FILLING:
  • Oil - 1 tablespoon
  • Asafoetida powder/Hing powder - a pinch
  • Cumin seeds/Jeera - 1/2 teaspoon
  • Whole coriander seeds/Dhania dane - 1 teaspoon
  • Cashew nuts/Kaju - 4 to 5
  • Ginger-green chili paste/Adrak-hari mirch paste - 1/2 to 1 teaspoon
  • Onion/Pyaaz - 1 big finely chopped
  • Gram flour/Besan - 1 tablespoon
  • Potato/Aloo - 1 boiled
  • Salt - to taste
  • Red chili powder/Lal mirch powder - 1/2 to 1 teaspoon
  • Turmeric powder/Haldi powder - 1/4 teaspoon
  • Coriander seeds powder/Dhania powder - 1/2 to 1 teaspoon
  • Cumin seeds powder/Jeera powder - 1/4 teaspoon
  • All spice mix powder/Garam masala - to taste
  • Dry mango powder/Amchur powder - to taste
  • Black pepper powder/Kali mirch powder - to taste
  • Dry fenugreek leaves/Kasuri methi - to taste
  • Coriander leaves - to garnish
  • Oil - for frying

Instructions

  1. FOR DOUGH:
  2. In a bowl, put the maida, 2 tablespoon of ghee and salt to taste. Mix well with hands. Add 1 more tablespoon of ghee so that the flour binds well.
  3. Put water in small quantity and make dough of medium consistency. Rest the dough for 30 minutes.
  4. FOR KACHORI FILLING:
  5. Heat oil in a wok/kadhai. Put the hing powder, cumin seeds, crush the whole coriander seeds and then add. Put cashew nuts, ginger-green chili paste and onion. Mix well.
  6. Now, put the besan and saute on high flame. Then, put the boiled and mashed potato, salt to taste, red chili powder, turmeric powder and coriander seeds powder.
  7. Put the cumin seeds powder, all spice mix powder, dry mango powder, black pepper powder, rub dry fenugreek leaves and add. Cook for 1 to 2 minutes and garnish with coriander leaves.
  8. The filling is ready. Allow it to cool down.
  9. FOR KACHORI:
  10. Heat oil for frying on high flame. Take one small to medium portion of the dough. Hold in hands and spread with fingers and make a small roti. Or you can use a rolling pin.
  11. Make a small size ball of the filling and place it on the roti. Fold from all sides and close it. Press lightly with palms. Press from the sides.
  12. Once the oil is hot, switch to low flame. Put a small piece of dough to check the hotness of oil. If it bubbles and comes up. The oil is ready for frying.
  13. Put the kachori in the oil. Fry from all sides for 7 to 10 minutes on low flame. Keep stirring the kachori and fry till it becomes brownish in color.
  14. The Pyaaz Ki Kachori - Jodhpur Famous is ready to be served.
