Pyaaz Ki Kachori | Onion Kachori is a Rajasthani delicacy and loved by all.

Pyaaz Ki Kachori | Onion Kachori is crunchy and a lip-smacking snack. The stuffing uses onion, little potato for binding, some whole spices and some ground spices. This yummy stuffing is covered with dough then baked. Yes, it is not fried, this is a baked version of the kachori which is tasty and healthy. Kachori is an all-time-favourite snack item among Indian. And if it is Pyaaz ki Kachori then it becomes a tasty treat with green chutney, tamarind chutney and a cup of tea. This kachori is very easy and simple to prepare. Moreover, it is very crunchy from outside with a spicy and mouthwatering stuffing. So, try to make this baked delight at home and enjoy with your loved ones.

Tips and Suggestions by Mom Chef:-

  • First of all, cool the stuffing completely then use it. Else, the kachori will be soggy from inside.
  • Resting of the dough is important. But if you want to use the dough immediately then knead the dough for 4 to 5 minutes with some oil then use.
  • While baking, grease the kachori with oil. It will give a nice colour and texture to the kachori. And for the shine grease the kachori once again after 30 minutes. Bake it again for 1 to 2 minute.

Ingredients

  • INGREDIENTS FOR STUFFING:-
  • Onion - 2 medium sized
  • Potato - 1 medium sized
  • Green Chilli - 2 chopped
  • Ginger - 1 inch piece finely chopped
  • Besan/Gram flour - 2 Teaspoon
  • Turmeric powder - 1/4 Teaspoon
  • Red Chilli powder - as per taste
  • Amchur/Dry Mango Powder - 1/2 Teaspoon
  • Garam Masala/All spice mix - 1/4 Teaspoon
  • Roasted Cumin powder - 1/2 Teaspoon
  • Crushed Black Pepper - 1/4 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Whole Coriander Seeds - 1/2 Teaspoon
  • Cashew Nuts - 4 Or you can add Raisins
  • Salt - as per taste
  • Oil - 2 Tablespoon
  • INGREDIENTS FOR DOUGH:-
  • Maida/Refined flour - 2 Cup
  • Salt - as per taste
  • Ghee/Clarified Butter - 2 Tablespoon
  • Oil - 1/2 Teaspoon + for greasing

Instructions

  1. PREPARING THE DOUGH:-
  2. Take a bowl and add refined flour, ghee, salt. Mix well Check the moyan. Take the flour in your hands and bind it. If it is binds then the moyan is perfect.
  3. Add water to make a semi soft dough. Grease it with 1/2 teaspoon oil and knead it for few seconds. Then cover the dough and rest it for at least 15 Minutes.
  4. PREPARING THE STUFFING:-
  5. Take a pan, add oil and heat it.
  6. Add cumin seeds and let is splutter. Crush the coriander seeds between the palms and add to the oil. Add cashew nuts too. Saute it for few seconds.
  7. Add chopped green chilli and ginger. Saute it for few seconds.
  8. Then add chopped onion and saute it until the onion turns little pinkish. Then add boiled and mashed potato and gram flour. Mix well and saute for few seconds.
  9. Add turmeric powder, red chilli powder, salt, dry mango powder, garam masala, roasted cumin powder, crushed black pepper. Mix well and saute the mixture for a minute. Add coriander leaves and mix well. Switch off the gas and let it cool completely.
  10. PREPARING THE KACHORI:-
  11. Preheat the oven at 180 degrees Celsius for 10 minutes.
  12. Take a big sized dough ball. Flatten it with hands. Make a ball of handful stuffing. Place it in the center. Seal the edges properly. (you can make small size as well)
  13. Flatten the kachori with hands. Grease the kachori with oil from both the sides.
  14. Place the kachori on a baking tray. Bake it at 200 degrees Celsius for 30 minutes.
  15. Grease the kachori with oil once again and bake it for 1 to 2 minutes. This will give shine to the kachori.
  16. Once done, take it out. Delicious 'Pyaaz Ki Kachori | Onion Kachori' is ready to be served with green chutney and tamarind chutney.
