Ragda Patties | Ragda Pattice is popular street food.

Ragda Patties | Ragda Pattice is a colorful and famous dish in Mumbai. It is made with nice golden brown, crispy patties, and spicy white peas ragda. Moreover, you just need white peas, boiled potato, onion, tomato, and some spices to prepare this tasty food. It is an easy and healthy snack for your family. In addition, kids as well adults will love its taste. Ingredients

  • FOR BOILING WHITE PEAS :
  • White peas / Safed matar - 1 cup
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Water - As required
  • FOR PREPARING RAGDA :
  • Oil - 1 Tablespoon
  • Asafoetida / Hing - A pinch
  • Ginger-green chilli paste / Adrakh-hari mirchi paste - 1 Teaspoon
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Salt - As per taste
  • All spice mix powder / Garam masala - 1 Teaspoon
  • Water - As required
  • Coriander leaves / Hara dhaniya - A handful
  • FOR PREPARING PATTIES :
  • Potato / Aloo - 2 Boiled and mashed
  • Ginger-green chilli paste / Adrakh-hari mirchi paste - 1/2 Teaspoon
  • All spice mix powder / Garam masala - 1/2 Teaspoon
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • Asafoetida / Hing - A pinch
  • Bread crumbs - 2 Teaspoons
  • Oil - 1 Teaspoon + For greasing and roasting
  • FOR SERVINGS :
  • Meethi chutney - As required
  • Green chutney - As required
  • Onion / Pyaz - 1 Finely chopped
  • Tomato / Tamatar - 1 Finely chopped
  • Salt - As per taste
  • Red chilli powder/ Lal mirch powder - As required
  • Chaat masala - As required
  • Zero number sev / Nylon Sev - As required
  • Coriander leaves / Hara dhaniya - For garnishing

Instructions

  1. FOR BOILING WHITE PEAS :
  2. Soak white peas overnight. In the morning, drain out its water. Boil it with salt and turmeric powder in a pressure cooker till 1 whistle on a high flame. Then keep the flame low and boil it till 5 to 6 whistle.
  3. Let it cool down. Then take it out in a bowl. Keep it aside.
  4. FOR PREPARING RAGDA :
  5. Heat oil in a pan. Add asafoetida, ginger-green chilli paste, and boiled white peas. Mix well for 1 to 2 minutes on medium flame.
  6. Then add turmeric powder, salt, and all spice mix powder. Mix well. Then add little water to adjust the consistency.
  7. Now boil it on high flame for 1 to 2 minutes. Then keep the flame low and boil it for 4 to 5 minutes. Then add coriander leaves and mix well.
  8. Once done, turn off the flame. Keep it aside.
  9. FOR PREPARING PATTIES :
  10. Take potato in a bowl. Add ginger-green chilli paste, all spice mix powder, salt, turmeric powder, asafoetida, bread crumbs, and little oil. Mix well.
  11. Now grease your palms with oil and take a big ball-sized portion of the potato mixture. Press it with your hands and prepare flattened patties. Likewise, prepare all patties.
  12. Meanwhile, heat a pan over medium flame. Grease it with oil. Place the patties in a pan. Add oil and roast it on a low flame for 2 to 3 minutes.
  13. Roast the patties from one side till it becomes nice golden brown and crispy. Then flip it to roast it from another side. Likewise roast all tikki.
  14. Once done, take it out to the serving plate. Then pour prepared ragda, meethi chutney, and green chutney on it.
  15. Now add onion, tomato, salt, red chilli powder, chaat masala, nylon sev on top. Garnish it with coriander leaves.
  16. 'Ragda Patties | Ragda Pattice' is ready to be served.
