Tips and Suggestions by a Mom Chef:

  • If the sooji is coarse then grind it to make it fine.
  • Once ghughra / gujiya becomes light golden in color then flip it using a slotted spoon to fry it from another side.

Ingredients

  • FOR PREPARING THE STUFFING :
  • Clarified butter / Ghee - 2 tsp
  • Fine semolina / Rava / Suji - 1/2 Cup
  • Powdered sugar / Pisi hui chini - 1/4 Cup
  • Roasted dry fruits powder - 3 tsp (almond, cashew, and pistachio)
  • Raisins / Kishmish - 2 tsp chopped
  • Cardamom powder / Elaichi powder - 1/2 tsp
  • FOR PREPARING THE DOUGH :
  • All purpose flour / Maida - 1 Cup
  • Salt / Namak - A pinch
  • Clarified butter / Ghee - 1 & 1/2 tsp
  • Water - As required
  • OTHER INGREDIENTS :
  • Oil - For frying
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING THE STUFFING :
  2. Heat ghee in a pan. Add semolina and roast it for 7 to 8 minutes on low flame till it becomes light brown. Keep stirring occasionally.
  3. Once done turn off the flame and transfer it to a bowl. Add powdered sugar, roasted dry fruit powder, raisins, and cardamom powder. Mix well. Keep it aside.
  4. FOR PREPARING THE DOUGH :
  5. Take all purpose flour in a bowl. Add salt and ghee. Mix well. Now add water gradually and prepare a medium soft dough. Keep it aside.
  6. FOR PREPARING THE GHUGHRA / GUJIYA :
  7. Make a small round ball from the dough and roll it into a small roti. Apply water on its border. Stuff it with rava mixture and fold it. Press the edge with your fingers.
  8. Now make a design on the edge by folding it using your thumb and fingers. Likewise, prepare all ghughra / gujiyas.
  9. Heat oil for frying on medium flame. Now keep the flame low and put the ghughra / gujiyas carefully in the oil and fry them on a low flame for 2 to 3 minutes until it becomes light golden in color.
  10. Then flip it using a slotted spoon. Deep fry them until becomes golden brown from both sides. Once done. Take them out to a serving plate.
  11. 'Rava Ghughra | Suji Gujiya' is ready to be served.
