Restaurant Style Mix Veg Sabji is a lip-smacking and delicious dish. It tastes great with hot roti, phulka or naan. A perfect weekend lunch special dish. From adults to kids everyone will enjoy it. Besides, it is full of healthy vegetables like carrot, beans, sweet corn and green peas. It requires simple and easily available spices. Adding the homemade malai and cashew nuts paste gives it rich taste. Thus, making it a savory dish. So, try this recipe and let us know your feedback in the comment section.

Tips and suggestions by the Mom Chef:-

  • You can put whole spices of your choice.
  • Parboil the green peas and sweet corn, by putting in boiling water and cook on low flame for 3 to 4 minutes.
  • Soak 5 to 7 cashew nuts in water at room temperature for 15 to 10 minutes and grind to make it’s paste.

Ingredients

  • FOR GRAVY:
  • Oil - 1 tablespoon
  • Cumin seeds/Jeera - 1 teaspoon
  • Bay leaf/Tej patta - 1 no
  • Cloves/Laung - 2 no
  • Cardamom pods/Elaichi - 2 no
  • Cinnamon stick/Dalchini - small stick
  • Black peppecorn/Kali Miri - 4 to 5 no
  • Green chili /Hari mirch - 1 slit + 1
  • Ginger/Adrak - 1/2 inch grated + 1/2 inch
  • Tomato/Tamatar - 4 no
  • Kashmiri red chili powder/Lal mirch powder - 1 teaspoon
  • Turmeric powder/Haldi powder - 1/4 teaspoon
  • Coriander seeds powder/Dhania powder - 1 teaspoon
  • All spice mix powder/Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Cashewnuts/Kaju paste - of 5 to 7 no
  • Dry fengreek leaves/Kasuri methi - to taste
  • Homemade malai/Milk cream - 2 tablespoon
  • Coriander leaves - to garnish
  • FOR MIX VEGETABLES:
  • Oil - 1 tablespoon
  • French beans/Beans - 1/2 cup finely chopped
  • Carrot/Gajar - 1/2 cup finely chopped
  • Green peas/Hare matar - 1/2 cup finely chopped
  • Sweet corn - 1/2 cup parboiled
  • Cottage cheese/Paneer - 1/2 cup (small size cubes)

Instructions

  1. FOR MAKING THE GRAVY:
  2. Heat 1 tablespoon oil in a wok/kadhai. Put the cumin seeds, bay leaf, cloves, cardamom pods, cinnamon stick, black peppercorn, one slit green chili and 1/2 inch grated ginger. Saute well.
  3. Take tomatoes, one green chili and 1/2 inch ginger in a mixer jar. Grind to make tomato puree. Then add this puree to the wok. Mix well.
  4. Now, put the kashmiri red chili powder, turmeric powder, coriander seeds powder, all spice mix powder and mix well. Allow it to boil.
  5. Then, put the cashew nuts paste. Mix well. Rub the dry fenugreek leaves and then add. Cook for 3 to 4 minutes till the oil oozes from it.
  6. FOR PREPARING THE MIX VEGETABLES:
  7. Heat 1 tablespoon of oil in a pan. Put the finely chopped beans, carrot and saute for 3 to 4 minutes till they become soft.
  8. Then, put the parboiled green peas, sweet corn and mix well. Put the paneer cubes and saute for 1 to 2 minutes.
  9. FOR MAKING THE MIX VEG SABJI:
  10. As the gravy cooks, put the sautéed mix vegetables in the gravy. Add the homemade malai, mix well and garnish with coriander leaves.
  11. The Restaurant Style Mix Veg Sabji is ready to be served.
