Ingredients

  • Garlic / Lahsun - 1 Whole
  • Fennel Seeds / Saunf - 1 tsp
  • Cumin Seeds / Jeera - 1 tsp
  • Mustard Seeds / Rai - 1 tsp
  • Dry Red Chilli / Sukhi Lal Mirch - 2
  • Salt - As per taste
  • Mustard Oil / Sarso Ka Tel - As required
  • Whole Wheat Dough / Gehu Ka Aata - As required
  • Oil - As required
  • tsp = teaspoon

Instructions

  1. FOR PREPARING ROASTED GARLIC CHUTNEY :
  2. Roast fennel seeds, cumin seeds, mustard seeds, and dry red chilli in a pan. Roast it for 2 minutes on a high flame. Keep stirring continuously.
  3. Once done, turn off the flame and let it cool down.
  4. Take garlic and roast it directly on medium to low flame for 3 to 4 minutes till its skin becomes black.
  5. Rotate garlic occasionally on the direct flame as they should not burn. Once done, turn off the flame and slightly let it cool down.
  6. Peel roasted garlic and transfer it to a grinding jar. Add the roasted spices mixture, salt, and 1 tsp of mustard oil. Grind it for a few seconds to prepare its chutney.
  7. Take it out on a serving plate. Add 1/2 tsp of mustard oil on it.
  8. FOR PREPARING PARATHA :
  9. Take a small ball-sized dough, and dust it with flour. Prepare a paratha from it.
  10. Start folding the paratha to make a triangle shape. First, fold it in half. Then fold it again to make a triangle shape. Roll it to make a paratha.
  11. Meanwhile, heat a tawa. Place the paratha on it and cook it on a medium flame.
  12. Flip the paratha and cook it on a medium flame for 2 - 3 minutes and keep pressing it. Cook it well from both sides by applying oil to it. Once it is done, take it out on a serving plate.
  13. 'Roasted Garlic Chutney With Paratha' is ready to be served.
