Sabudana Vada

Sabudana Vada is an easy and quick snack recipe for fasting.

Sabudana Vada is a fried vada prepared with tapioca pearls (sago), potatoes, peanuts, and herbs. It is a super delicious snack that is crispy from the outside and light from the inside. Moreover, it is a common ingredient that is used in some recipes prepared during the fasting season (upvas/vrat). This recipe is the proper authentic way to prepare it perfectly and tastes too good. Tips and Suggestions by Chef:

  • The proportion of ingredients (potatoes and sabudana) should be perfect or you may end up with a soggy or broken batch of the vada.
  • You can give shape to the vada easily without any binding flour.
  • Serve it hot with the sweetened curd.
  • If the vada mixture become dry add boiled potato.
  • If the vada mixture become soft, add ground peanut powder.

Ingredients

  • Sabudana/ tapioca pearls (sago) - 2 tablespoons
  • Potato - 2 tablespoons boiled
  • Peanuts - 2 tablespoons roasted and roughly crushed
  • Green chili - 2 finely chopped
  • Coriander leaves - 1 tablespoon finely chopped
  • Rock salt/ senda namak - as required
  • Oil - as required for frying
  • Black pepper powder / Kali mirch - 1/2 Teaspoon
  • Lemon juice / Nimbu ka ras - Of 1/2 lemon

Instructions

  1. Wash the sabudana with water to remove it's starch for 3 to 4 times. Soak sabudana in cold water for 45 minutes. Add water til sabudana are completely submerged in it.Then strain all water and keep it for 4 to 5 hours.
  2. Take a bowl, add soaked sabudana, potato, peanut, green chili, rock salt, and coriander leaves, lemon juice, and black pepper powder. Mix it well
  3. Now, apply oil on hands and take a ball sized dough from the mixture. Flatten it slightly to form a vada.
  4. Further, deep fry in hot oil stirring occasionally. Fry on medium flame until the vada turns golden brown and crisp.
  5. When one side is light golden, turn it over.
  6. Continue to fry turning over a couple of times till the vada are uniformly golden and crisp.
  7. Drain off the vada into the kitchen paper to remove excess oil.
  8. Delicious Sabudana Vada is ready to be served.
