Shahi Paneer Sabji Without Tomato Onion is rich and creamy sabji prepared from paneer, cashew and peanut paste, and spices. The soft tender paneer cubes served with rustic cashew and peanut based gravy flavored with kasuri methi is simply lip-smacking. There are several variations to this creamy and rich paneer recipe. The amazing texture and delicious flavor make it richer. Serve it with the roti or chapati or rice or paratha. Tips and Suggestions by Mom Chef:-

  • Peanuts are added to the paste to give it a thick and rich texture. Adding peanuts are optional.
  • Use homemade paneer and fresh curd.
  • You can also prepare the paste using only soaked cashew.
  • Add some curd to saute the paneer properly.
  • Make sure to turn off the flame while adding curd.
  • To make the sabji more colorful, you can also add spices like red chili powder, turmeric powder, or coriander powder.
  • Make sure to add malai (fresh cream) to give it a rich taste.
  • Always use ghee to enhance its taste.
  • Here, we added paneer and then paste but you can also cook the paste first and then add paneer.

Ingredients

  • Paneer/ cottage cheese cubes - 1 cup
  • Cashew - 10 to 12
  • Water - as required
  • Roasted peanuts - 10 to 15 (optional)
  • Ghee/ clarified butter - 2 tablespoons (1 tbsp for sabji and 1 tbsp for tadka)
  • Cumin seeds - 2 teaspoons (1 tsp for sabji and 1 tsp for tadka)
  • Bay leaf - 1
  • Green chili - 3 slit
  • Crushed black pepper - as required
  • Curd (room temperature) - 2 tablespoons
  • Salt - as required
  • Fresh cream/ malai - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Red chili powder - as required (optional)
  • Coriander leaves - finely chopped as required
  • Kasuri methi/ dry fenugreek leaves - as required

Instructions

  1. Take 10 to 12 cashews and soak it in the water for 10 to 15 minutes.
  2. Now, take a mixer jar and add soaked cashews and roasted peanuts. Grind it to a fine paste.
  3. Heat ghee in a pan and add cumin seeds, bay leaf, green chili, and crushed black pepper.
  4. Now, turn off the flame and pour curd. Add paneer and turn on the flame. Saute it properly.
  5. Further, add the cashew paste and saute it gently.
  6. Add salt and pour some water. Saute it well.
  7. Now, add malai and Saute it.
  8. Meanwhile, heat ghee in a pan and add mustard seeds and cumin seeds. Allow it to splutter and turn off the flame.
  9. Immediately add red chili powder and pour the tadka into sabji. Mix it well.
  10. Add coriander leaves and kasuri methi. Mix it and turn off the flame.
  11. Delicious Shahi Paneer Sabzi Without Tomato Onion is ready to be served.
