Tips and Suggestions by the Chef:-
- Grinding the ingredients with cold water, lessens the heat absorption of the mixer to the idli batter and helps the idli batter to become fluffy.
- Instead of idli rice, take regular rice for preparation of batter.
- If the batter is in non-ferment form, then store it in refrigerator for 10 weeks. As per requirement, ferment the batter and use it to make idlis.
- If the ingredients measure to 3 cups, then 4 cups of water is needed for soaking.
