Tinde Ki Sabji is a yummy and healthy dish. It tastes great with hot roti or phulka. Tinda has various names like apple gourd, Indian squash, Indian baby pumpkin. It is a rich source of dietary fibrers, vitamin C & E, and anti-oxidants. The preparation of this dish requires simple spices like red chili powder, coriander seeds powder, all spice mix powder and turmeric powder. The addition of besan and tomato makes a tasty and savory gravy. Topping with kasuri methi and malai makes it rich and palatable. Tips and Suggestions by Mom Chef:-
- In place of ginger-green chili paste, you can use grated ginger and green chili.
- Adding the besan gives thicknes to the gravy.
- In place of grating the tomatoes, you can make puree and add.
- Wash and peel the tinda. Cut it in four pieces if medium size or two pieces if small in size.
- If you want you can saute the tinda pieces in 1 tablespoon oil for 4 to 5 minutes. Or you can cook the raw pieces directly in the tomato gravy.
